Healthy Sweet Potato Carrot Soup

Sweet potato carrot soup

Sweet potato carrot soup

My family loves thick vegetable soup. It is very easy to cook and very healthy. As I love sweet potatoes, one of my top favourite vegetable soups is sweet potato and carrot soup. It has a lovely natural sweetness of its own and goes great with some crusty bread. This time when I cooked this soup, I made fried garlic tortilla pieces to go with it. It is very delicious. I’ll share that in another post.

The hand stick blender that I bought recently is not only very easy for making smoothies but also very easy for making this type of thick soup. If you like smoothies, click How To Make A Delicious Low Fat Healthy Smoothie.

Jungle Fern (Midin) Stir Fry

Midin stir fry

Midin stir fry

Excited to share a wonderful wild jungle vegetable. It’s a fern and locally known as ’midin, milin or bilin‘. This special wild jungle fern stir fry is one of the only 2 dishes that I cooked during my recent holiday back to Malaysia. The other dish was Bitter Gourd And Egg Stir Fry. These are just a couple of my favourite local vegetables. Midin stir fry is one dish that everyone who visits Sarawak must try. It has a crispy texture and tastes very good.

Fresh midin

Midin is very popular in Sarawak. It is a common dish in restaurants. It’s a creepy plant and grows wild in the forest. It’s regarded as a delicious and nutritious wild vegetable. Apparently this particular fern only grows on the island of Borneo. I’m interested to know where else they grow. The natives would pluck the top section of the fern and sell them at the local jungle produce market. I heard that these days people plant them for sale.

Bitter Gourd And Egg Stir Fry

Bitter gourd and egg stir fry

Here’s another post about my holiday back in Malaysia. In my short trip back home, I only cooked 2 dishes. My sweet mother-in-law cooked almost the whole time. We actually ate out most of the time until I fell ill with high fever. Sadly my enjoyable food adventure ended there. By the time I recovered I had to leave.

The best of all are all the local fruits as I shared in my previous post, Best Local Fruits Of Malaysia. Next on the list are the local vegetables. There are a few that I really like and we ate a lot. They are the ’sweet vegetables’, ‘kangkong’ which is also commonly known as ‘water spinach’ and the local fern. On top of that I also like bitter gourd, a bitter vegetable, which is difficult to get here. It is also known as bitter melon.

Laksa Salmon With Asparagus Stir Fry

Laksa salmon asparagus stir fry

Laksa salmon asparagus stir fry

Salmon is a very delicious fish and comes with many health benefits, especially for its high omega-3. Wild Alaskan salmon is the best but much more expensive. I love to cook salmon because it is easy to cook and tastes very delicious. Just recently I have come to like smoked salmon.

This salmon stir fry with asparagus is very simple and easy. The laksa paste adds beautiful flavour and taste to it. The laksa paste that I used here is the same one that I used in Malaysian Curry Fish Laksa. Here is my recipe:

Simple Chicken Vegetable And Egg Stir Fry

Simple chicken vegetable stir fry

Simple chicken vegetable stir fry

This dish is what I ate very often when I was young. We didn’t have much during those days and our meals were always very simple but very healthy. We only had sea salt and soya sauce for seasoning the food. We didn’t always have chicken and so most of the time this dish is just eggs, vegetables and sea salt but we were all very happy and ate it heartily with  a big plate of rice. We were always thankful for any food that we had. I still cook this dish very often.

Tom Yum Spinach Stir Fry

Tom yum spinach stir fry

Tom yum spinach stir fry

I’m excited to share this beautiful tom yum spinach stir fry which I learned from my daughter! I have been very busy lately and didn’t had much time to cook. One day my daughter went on an experiment spree in my kitchen! When she found a bottle of tom yum paste in the fridge, she was so delighted and tried it on spinach. Oh wow…I have to admit it was very delicious. Best of all it was so simple and really quick to cook, maybe a minute or two only. Keeping my fingers crossed that they will be better cooks than me so that I can relax…haha

Malaysian Curry Fish Laksa

Curry laksa fish

Curry laksa fish

Curry laksa is one of my family’s top favourites. There are lots of Malaysian curry laksa. I must say every state and every race in Malaysia has its own version of laksa. To make laksa from scratch is very time consuming as there are all the spices and herbs to pound. Packet laksa mix or fresh laksa paste are easily available these days which brings back the joy and fun of home cooked laksa. While fresh laksa paste is usually not available overseas, as far as I know, I’m just very thankful that I can get packet laksa paste here.

Salmon Burger And Kids Meal

Salmon burger with mixed vegetables

Salmon burger with mixed vegetables

I usually serve all the dishes on the table but I also like serving a meal on a plate for various reasons. Firstly, it looks beautiful. Secondly, there will be no leftovers as all the food are divided out. Thirdly, it looks a lot and this will discourage more helpings. This is good especially for those who are trying to lose weight. This salmon burger dish is one of them. It makes for a good adult’s meal as well as a kid’s meal.

I love salmon not only for it’s delicacy but also for it’s health benefits, especially wild Alaskan salmon. It is high in Vitamin D and omega-3 fatty acids which are important for the heart and brain. Unlike other meat, it is not fed with antibiotics and hormones. Wild Alaskan salmons are also caught from the least polluted place on earth.
