Sweet potato again…my favourite! It’s very popular in Asian countries. It’s not only liked for its delicacy but for its many health benefits. It is rich in vitamins and minerals, especially vitamin A, B and C. I was brought up eating lots of sweet potatoes. My parents planted them all the time. I can still remember they usually planted 4 types. They were the yellowish ones, light orange ones, darker orange ones and the purple ones. All of them taste very delicious.

My whole family loves this rice pancake. It’s called ‘chee cheong fun‘, ‘cheong fun‘ or ‘churng fun‘ in Malaysia, Singapore and Hong Kong. This is a very popular Chinese dim sum dish, one which my children will order a few plates if we ever visit a dim sum shop.

When I came across this recipe at LilyNg’s blog, I was very excited. I tried it out the very next day for breakfast. My family liked it very much. This rice pancake is still a little too soft for my taste but it’s a good one to start off with and then tweak around later. At least I’m happy we don’t have to run to dim sum shop for this which is also very expensive to eat. I checked it out with Lily and she said she is still looking for the perfect ‘chee cheong fun’, like what we get back in Malaysia.

Talk about sweet potato, I just become happy and alive. I think my house never run out of it. Sweet potato is a very nutritious vegetable and very delicious no matter how you cook it. It’s complex carbohydrate, high in fibre and very good for health.

Here comes my top sweet favourites in a cake…condensed milk and sweet potato! This is one beautiful dessert that makes my day. This is just another little achievement of Keep Learning Keep Smiling. Trying out new things is always fun and exciting.

We were taught from young, “If there’s a will there’s a way”. It’s very true. Desires and passion drive you to achieve. Here, my craving (passion?) for condensed milk and sweet potato drives me into a creative mode many times. This condensed milk sweet potato cake is just another new creation and it is very delicious. It’s my new favourite. It doesn’t come with the texture of normal cake but I like the texture, the flavour and the taste.

Worse come to the worse, I eat the whole plate myself and the rest of my family eats plain rice…haha. But to my surprise and delight, this combination came out a hit in my family. Sweet potatoes make great desserts. I was really delighted to discover that it is possible to make a sweet potato gnocchi dessert. The gnocchi was chewy and really delicious in palm sugar syrup, drizzled over with coconut cream. My daughter liked it very much.
