I would love to share this wonderful dish, very healthy, nutritious and delicious. With so many herbs and vegetables, it’s one that is very good for health. It is high in fibre too.I usually cook it once a week, during the weekend. My children always help with the herbs and cutting up the vegetables. This dish came from the Hakka people, one of the many Chinese ethnic groups. It is called ‘lei cha‘ in their dialect. Translated, it’s called ‘thunder tea‘. How interesting! I was told that the Hakka people cook this after Chinese New Year to clean out the system after all the eating and drinking.

From the many salmon dishes that I had posted, it’s obvious that many people like salmon, whether for it’s health benefits or for it’s flavour and delicacy. Salmon is very versatile and can be cooked in many ways. My family loves salmon and I cook it very often. But there are times when I cook too much and there are leftovers. I am not very good in using leftovers and sometimes they just ended up in the bin. This rice noodle fry with leftover salmon actually turned out delicious. I liked it but my husband thinks it would be more delicious with chicken. I think it’s because he has never heard or eaten fried noodles with salmon!

Fried rice is such a comfort food. It’s my favourite, both to cook and to eat. My whole family loves fried rice. It is simple, easy and quick to dish up a meal and yet tastes very delicious. This Malaysian Country Fried Rice is very delicious. Crispy anchovies are always added. Other ingredients vary.

Daughter’s Comment On Blog Post

Just very recently my daughter cooked fried rice. It was very simple but tasted very delicious. I called it Special Fried Rice because she offered to cook it when she saw that I was very busy. I had some Cajun prawns and crab sticks stir fry left over when I cooked it the other day. I thought that would make a delicious meal with fried rice vermicelli the next day. Prawns, or shrimps, are my hot favourite. I knew I would love this dish. It was very delicious indeed.

Rice vermicelli is a great favourite in Malaysia, as in all other Oriental countries. It is commonly cooked in soup, fried with sauce or just dry fried and eaten any time of the day. I usually cook this for lunch or parties. Rice vermicelli comes in different sizes, from very fine ones to fairly thick ones. I usually use the medium ones as the fine ones are too delicate to cook and the thick ones take too long.

This is a special fried rice. It is special not because of any special ingredients but because it was cooked by my daughter, and the photos were also taken by her. I was very busy and she offered to cook lunch for all of us. How sweet of her! I think it’s a very good opportunity for her to learn, at least something simple. I was impressed by the presentation, too. It actually tasted very delicious, even though it looks very simple. The texture and flavour was very well balanced. She used some celery leaves for garnishing. I guess that was all that she could find in the fridge!

This is a very popular dish in every Chinese or Asian restaurant and takeaway. To make it a great meal and looking impressive, I decided to make it into a rice parcel, add some colourful salad and some ginger and coriander baked chicken to it. There’s nothing better than eating something hot in the morning when the weather is cold. It’s good for the body. The soup warms up your body before you walk out of the door to face the cold.

I love this particular dish…..Rice Cake Soup, which is a light, fast Chinese breakfast. Again it’s very easy to prepare. I baked the poussin chicken (spring chicken) the night before. You need to soak the rice cake prior to cooking. So I soak half the packet of the rice cake so that it will be ready for cooking the next morning. That is enough for 2 persons. Rice Cake is easily available in any Oriental or Asian shops.
