Thanks very much to everyone who dropped by to read and also to leave your comments which I always enjoy reading…with big smiles of course! So sorry for missing in action for quite a while. I really need to get back to more cooking, taking pictures, writing and visiting your blogs. Oh wait, I have been cooking a lot the past couple of weeks….for friends. Had several church functions. Then we had a wonderful visitor from London who came to visit for a few days. Had lots of food and laughter of course. Trust everyone is well and having fun on your side too.

Seafood Risotto

Delicious seafood risotto

If you ask, “Who likes rice?”, you bet both my hands will shoot up immediately! I LOVE rice. I was brought up eating rice, 3 times a day. So, I continue to love rice, but not 3 times a day any more. I still eat rice for lunch and dinner most of the time. But I don’t mind skipping a day without rice if I have to, especially when on holiday somewhere.

King Prawns And Herbs Fried Rice

King prawns and herbs fried rice

King prawns and herbs fried rice

Fried rice is such a comfort food. I’m sure everyone likes it. It’s really a meal on a plate. I was very surprised when I came to Scotland and found that restaurants even sell egg fried rice…only with eggs! That shows how popular fried rice is in this part of the world. To me, I don’t think it’s any worth the money paid. Cooked at home, you enjoy all the good quality ingredients, eat your heart’s out and save a lot of money. I think my plate of fried rice will have to cost at least £15 here with so many king prawns, herbs and other good quality ingredients used. I have eaten a very simple country fried rice that cost about £8.20! There were very few ingredients in it. Home cooked food is still the best!

Steamed Sticky Rice Cake (Nian Gao)

Nian gao and nian gao omelette

Nian gao and nian gao omelette

This is Steamed Sticky Rice Cake, also called Nian Gao in Mandarin, or Chinese New Year Cake. It is a very popular Chinese dessert. This is a dessert that you either like or hate. I don’t think there’s anything in between, just like durian, not so much of the smell but the texture. If you are not an Asian or exposed to Asian food, it’s highly likely you won’t like it. It’s quite similar to mochi balls…smooth, chewy and sticky. It is also sweet so that it can keep even without a fridge. The long steaming helps, too. With a fridge in almost every housework, this rice cake can keep for ages……if it ever last so long. It doesn’t last long in my house….hehe. For your info, Chinese New Year this year falls on 3rd Feb, the Year of the Rabbit!

Check out my Peanut Butter Mochi Balls if you like mochi balls. They are very easy to make.

Healthy Thunder Tea Rice (Lei Cha)

Thunder tea rice

Thunder tea rice

I would love to share this wonderful dish, very healthy, nutritious and delicious. With so many herbs and vegetables, it’s one that is very good for health. It is high in fibre too.I usually cook it once a week, during the weekend. My children always help with the herbs and cutting up the vegetables. This dish came from the Hakka people, one of the many Chinese ethnic groups. It is called ‘lei cha‘ in their dialect. Translated, it’s called ‘thunder tea‘. How interesting! I was told that the Hakka people cook this after Chinese New Year to clean out the system after all the eating and drinking.

Salmon And Rice Noodles Fry

Salmon and rice noodles fry

Salmon and rice noodles fry

From the many salmon dishes that I had posted, it’s obvious that many people like salmon, whether for it’s health benefits or for it’s flavour and delicacy. Salmon is very versatile and can be cooked in many ways. My family loves salmon and I cook it very often. But there are times when I cook too much and there are leftovers. I am not very good in using leftovers and sometimes they just ended up in the bin. This rice noodle fry with leftover salmon actually turned out delicious. I liked it but my husband thinks it would be more delicious with chicken. I think it’s because he has never heard or eaten fried noodles with salmon!

Daughter’s Comment On Blog Post

Just very recently my daughter cooked fried rice. It was very simple but tasted very delicious. I called it Special Fried Rice because she offered to cook it when she saw that I was very busy. That’s so sweet of her! Just in case you missed out on her comment on the blog post, she wrote, “Hello to everyone who reads my mom’s blog. I’m Sharon her daughter who cooked the fried rice that you are all so lovely to compliment  :) I’m just glad I didn’t burn down the kitchen haha. Thanks for all your comments. Keep coming back for more recipes and definitely try them out! Especially my mom’s food, which I know for sure is absolutely the most delicious in the whole world because I’ve tried it all lol. Mom, you’re amazing and I love you to bits.” Wow……beautiful and so touching! That makes her even sweeter….haha. Well, I do hope that I’m always an inspiration to her! Actually she is a real inspiration to me.
