If you ask, “Who likes rice?”, you bet both my hands will shoot up immediately! I LOVE rice. I was brought up eating rice, 3 times a day. So, I continue to love rice, but not 3 times a day any more. I still eat rice for lunch and dinner most of the time. But I don’t mind skipping a day without rice if I have to, especially when on holiday somewhere.

I’m not sure about you when comes to celebrating birthdays but I thought I had just gone through quite a lot of  stress in the run-up to my daughter’s birthday last week…….lots of unbending requests from her! One of them is the birthday cake…ONLY chocolate cheesecake. I tried to persuade her to go for a different cake with nice icing but then, “NO”, a flat “NO”…ONLY chocolate cheesecake. That’s what happens when our children grow up. They have a strong mind of their own at times……both good and bad.

Fried rice is such a comfort food. I’m sure everyone likes it. It’s really a meal on a plate. I was very surprised when I came to Scotland and found that restaurants even sell egg fried rice…only with eggs! That shows how popular fried rice is in this part of the world. To me, I don’t think it’s any worth the money paid. Cooked at home, you enjoy all the good quality ingredients, eat your heart’s out and save a lot of money. I think my plate of fried rice will have to cost at least £15 here with so many king prawns, herbs and other good quality ingredients used. I have eaten a very simple country fried rice that cost about £8.20! There were very few ingredients in it. Home cooked food is still the best!

The mobile broadband that I bought was not compatible with my Mac….so sad. Managed to borrow a laptop to use to type this paragraph. It seems quite a while that I have not cooked prawns, one of my top favourites. I had some big prawns when on holiday back in Malaysia recently. That was really delicious….mmmm. I can’t get those fresh prawns here but I’m thankful to have nice ready cooked king prawns and raw tiger prawns.

I have been craving for something spicy and sourish and just thought assam prawns would do the trick. It did! I used the ready Assam Fish Paste which makes cooking very easy and quick. I love this brand of paste, Tean’s. I had used its Curry Laksa Paste to cook Malaysian Curry Fish Laksa, Chicken Curry Paste to cook Fast And Easy Malaysian Chicken Curry and Prawn Noodle Paste to cook Malaysian Prawn Soup Noodles. All of them are very delicious and very easy to cook with the pastes.

When I am busy, I just want to have something very simple but yet very delicious. The best would be if it is one of my top favourites. Prawns, or shrimps, often came to my mind. They are totally different from my usual way of cooking prawns, which are very Asian style. I seldom use cream and cheese in my cooking but thought I should give a try.

Malaysia boasts itself of endless wonderful one-dish meal. I think it’s impossible to try all in a life time because more are created each day. That’s all because of the beauty of a multi racial nation. Prawn soup noodles, locally called ‘Hokkien Mee‘, is just one of the very popular one dish meals. It’s spicy but very delicious.

I was first introduced to this most delicious dish when I was in Penang, also known as ‘Pearl of the Orient’. I fell in love with it immediately. So this dish is always known as Penang Prawn Noodles to me. This is one of my top family favourite, more so for me as I really love prawns. This is one dish that my family would ask for every now and then.
