From the many salmon dishes that I had posted, it’s obvious that many people like salmon, whether for it’s health benefits or for it’s flavour and delicacy. Salmon is very versatile and can be cooked in many ways. My family loves salmon and I cook it very often. But there are times when I cook too much and there are leftovers. I am not very good in using leftovers and sometimes they just ended up in the bin. This rice noodle fry with leftover salmon actually turned out delicious. Nothing is better than homemade noodles. It is free of preservatives and additives. Apart from the ’somen’ which is white in colour, almost all the rest of the yellow noodles are made with some alkaline water, also called lye water, added to it to give it the more elastic texture. I like fast cooking. Any meal in 30 minutes and under is a fast meal. Sometimes I wonder if I spend more time thinking than cooking. I always look for tweaks, cheats and short cuts in my cooking but still not losing the tastes or the authenticity of a dish. Delicious Malaysian Fried Noodles (Part 2)

This favourite Malaysian Fried Noodles of mine goes well with the Malaysian Fried Curried Chicken (Part 1) in my previous post. Just like any other Malaysian cuisines, there are endless ways to fry noodles. In Malaysia, fried noodles is called,‘Mee Goreng’.

This is a very simple recipe. The most important is the quality of the noodles. It shouldn’t taste soft. It should have an elastic feel to it. If you have time, make yourself. Nothing beats homemade noodles.

Recipe for Fried Noodles
600g noodles
3 T dried onions
Oil
Vegetables (I use 2 packets of ready-washed salad)
3 eggs
2 T oyster sauce
2 T sweet chili sauce
2 T light soya sauce

First of all, make omelet. Stir it before it sets to break it up into small pieces. Remove.

Put a few tablespoons oil into the hot pan, add in the dried onions. Be careful, it turns brown very fast. Once it’s golden, add in the noodles and fry well. The fire must be very hot. Add in the 3 sauces, stir well. Then add in the vegetables and omelet. Mix well and dish up.

The amount of fried noodles is enough for 4 average eaters. I always add in a lot of vegetables to get everyone to eat more vegetables to make it a healthier version. I seldom serve deep-fry foods to my family but they do get a treat every now and then.
