It’s Monday again…another week has gone and another new week is here. Last week just passed by too fast! I’m happy to have accomplished quite a number of things. Being busy at times is good but being busy all the time is not good. A constantly stretched rubber band will easily snap. Recently I received a cookbook called ‘Cookery School‘. I was just totally delighted! It has been on TV Channel 4 for the past 9 weeks hosted by Gizzi Erskine and Richard Corrigan. This is the final week. I watched quite a number of shows trying to learn. It’s a very interesting cooking show where there are students learning to cook in the form of a competition. It must be nerve-wrecking. My daughter enjoyed it very much. She always goes, ‘That looks easy. I want to make it.’ But life’s busyness has taken its toll and she hasn’t cooked anything yet!

Soba noodles is one of my family’s favourite noodles. I introduced this noodles to my family when we came here to Scotland. I bought it out of curiosity because of its dark colour. On checking out, I found that it’s a popular Japanese noodles made from buckwheat flour mixed with wheat flour. Buckwheat flour is made from a non-gluten grain and is more nutritious than wheat flour or rice. It is good for health.

The weather here in Northern Scotland is getting cold fast. It has been very windy, grey and cold. I think it takes effort to keep smiling. Nothing is better than hot soup. My family loves hot soup and they love noodles, too. That makes cooking a simple, comforting and warming meal easy, especially if I am busy or lazy…..just noodle soup with all it’s topping. It’s quick, nutritious and delicious.

The other day I cooked a low fat seafood and tofu noodle soup for 2 persons….instant smiles of course. There’s very little oil as you can see in the picture. The wee little bit of oil is from the chicken bones that I used to make the soup.

Homemade egg noodles are very delicious cooked in anyway, either in soup, fried dry or fried with sauce. Here I have 2 noodle dishes that you can try, one is noodle soup and one is fried noodles. And with my Super Fast Chinese Roasted Chicken or my recent Spicy Aromatic Baked Chicken, these 2 noodle dishes here are just very easy and quick to cook.  Both are made from homemade egg noodles, topped with sliced Spicy Aromatic Baked Chicken.

I’m not sure how many people don’t like noodles but all those that I know like it very much. It’s like pasta in the West. In Asia, you will find loads and loads of noodles everywhere. They come in different sizes, different types and different colours. If you live there, you probably can’t be bothered to make yourselves. But I did when I was back home in Malaysia. I made my own egg noodles, also called ‘you mian‘ in Malaysia. The main reason is of course homemade egg noodles are clean and without any preservatives added. On top of that you can choose to use high quality ingredients like organic flour, organic or free range eggs, olive oil, sea salt and filtered water.

I’m back from my holiday! Thanks very much for visiting my blog and also for all your lovely comments on my scheduled blog posts while I was away. You have brought me a lot of smiles!

I had a most wonderful time even though it was short considering all the places that I visited and all the things that happened. I was in Hong Kong, Kuala Lumpur and Sibu to meet up with relatives, friends and family members. I attended 2 wedding receptions and 2 birthday celebrations. It was wonderful, too, meeting up with old secondary school classmates. All of them are doing very well in their careers.
