A healthy soup to start the year….Seaweed Soup. I remember eating lots of this when I was growing up. My mom cooked it very often. She said that seaweed contains iodine and eating it often will help the thyroid glands to function well. She would often show us people who suffer from goitre and we would be so frightened we would drink lots of this soup, together with the seaweed, too. I have seen people (more women and men) with huge goitre….that big growth in front of the neck. Some have big bulging eyes.

I met a man yesterday and he told me that celebrating Christmas and New Year so close together is hard because you spend too much. Maybe he can consider celebrating Chinese New Year then which is next month…to spread out the spending….hehe. For your info, Chinese New Year falls on 3rd February and it’s the year of the Rabbit!

I’m excited to share the good news. My dad is finally discharged from hospital. That’s a huge relief! I’m sure my mom is the happiest. She asked for him everyday. Suffering from Alzheimer’s, I think he is the only one she remembers.

As I look at my parents and a lot of ageing people, I think it’s very sad to see that many elderly folks are very frail and sick. Too many are confined to wheelchair or bed. The picture look very bleak and depressing. However there are also those who are still very healthy, alert and strong even through old age. They are the ones who inspire me. So, what is the difference? I don’t know. I would really like to know. It must be healthy food and healthy lifestyle. Are we eating healthy and living an active, healthy lifestyle?

Being back from Malaysia is never easy. The jet lag is really making me very miserable this time. It’s still very difficult to stay awake. I feel tired, sleepy and hungry all the time. I am sleeping like about 14 hours almost everyday since I came back, waking up every now and then in between to eat! This is the first time I travelled so far all alone and on a cold season. I count it as a great achievement…..happy! It was wonderful to be back in Aberdeen with my family but greeted by 4 degrees Celcius on landing is no fun. That makes me want to sleep all the more! Really hope I will get over with this whole misery soon. Still trying to smile!

Liquorice root is one herb that my parents introduced to us when we were very young. It is one of the most prescribed herbs in Chinese medicine, apparently second only to ginseng. It’s used widely in many Chinese medicine for various types of cure. It’s also added to many Chinese herbal mix for making tonic and therapeutic soups. It’s also known as a sweet root as it adds sweetness to soup.

I would love to share this wonderful dish, very healthy, nutritious and delicious. With so many herbs and vegetables, it’s one that is very good for health. It is high in fibre too.I usually cook it once a week, during the weekend. My children always help with the herbs and cutting up the vegetables. This dish came from the Hakka people, one of the many Chinese ethnic groups. It is called ‘lei cha‘ in their dialect. Translated, it’s called ‘thunder tea‘. How interesting! I was told that the Hakka people cook this after Chinese New Year to clean out the system after all the eating and drinking.

I mentioned in my previous posts that I wasn’t too happy when I found that 2 of my blog posts were stolen. But joy returned pretty soon after. The first one was the box of goodies sent by a lovely food blogger friend, Ann. Then I received a couple of emails from readers that they have tried out my recipes and really liked it. Stella, a regular reader and friend, said she must have cooked the Quick Sour Plum Sauce Chicken at least 9 - 10 times because her young son likes it very much and asks for it often. Wow……even I have not cooked it so many times! Zibi loved the Spicy Cashew Nuts Chicken (Gong Bao Chicken). She has even successfully made it in the slow cooker! That’s fantastic. Now I’m learning from her! I must say it’s all very encouraging.
