Healthy Thunder Tea Rice (Lei Cha)

Thunder tea rice

Thunder tea rice

I would love to share this wonderful dish, very healthy, nutritious and delicious. With so many herbs and vegetables, it’s one that is very good for health. It is high in fibre too.I usually cook it once a week, during the weekend. My children always help with the herbs and cutting up the vegetables. This dish came from the Hakka people, one of the many Chinese ethnic groups. It is called ‘lei cha‘ in their dialect. Translated, it’s called ‘thunder tea‘. How interesting! I was told that the Hakka people cook this after Chinese New Year to clean out the system after all the eating and drinking.

Total Greek Yoghurt with mixed berry coulis

I mentioned in my previous posts that I wasn’t too happy when I found that 2 of my blog posts were stolen. But joy returned pretty soon after. The first one was the box of goodies sent by a lovely food blogger friend, Ann. Then I received a couple of emails from readers that they have tried out my recipes and really liked it. Stella, a regular reader and friend, said she must have cooked the Quick Sour Plum Sauce Chicken at least 9 - 10 times because her young son likes it very much and asks for it often. Wow……even I have not cooked it so many times! Zibi loved the Spicy Cashew Nuts Chicken (Gong Bao Chicken). She has even successfully made it in the slow cooker! That’s fantastic. Now I’m learning from her! I must say it’s all very encouraging.

Salmon vegetable rice in salmon turkey curry soup

This is my follow-up post from yesterday on Salmon Turkey Curry Soup . It does seem like a weird combination but it was very delicious. We had a wonderful dinner of baked salmon, vegetables and rice in this curry soup. We had a very satisfying meal. The whole salmon that I bought was all worth it. Will I buy it again? Of course I will but I’ll buy on days when I am more free. On top of that I’ll be extra careful when I fillet it. I just have to ‘KEEP LEARNING’!

Refreshing, healthy fennel and apple juice

Freshly made juices are important for health. They are an integral part of a healthy diet. They are full of live nutrients that get easily assimilated into our body cells quickly, especially on an empty stomach, for the many important cell functions. My family has been drinking juices for more than 10 years. I enjoy juicing and I really love freshly made juices. My best and most common juice for my family is carrot and apple juice.

Sweet Potato Donuts

Syrup coated donuts

DONUTS or DOUGHNUTS! At the mention of it, my daughter will immediately go, ‘Ooooooooh, I want some’. She loves Krispy Kreme so much that she is willing to trade her breakfast, lunch and dinner for it! I seriously wonder what is so special about it. I mean, it’s just a small piece of flour dough with a hole in it and costs more than £1 each! To me it’s like eating gold. Besides, how do they still stay soft for a few days? That begs the question, ‘What are the ingredients?’

Lately I heard of another few people, my friend’s friends, who are diagnosed with CANCER. As I sat and tried to recall my many friends who had suffered from various cancer, there are 24 of them! Sadly, 20 of them eventually died a very painful death not too long after diagnosis despite all the latest cancer treatments. That’s really heart-breaking. Only 4 still survive. Out of these 4, I know of 2 who are on a very strict diet that incorporates a lot of juices, home grown vegetables and fruits and no meat into their diet. On top of that they live a healthy lifestyle. One of them had third stage colon cancer and is now at least 10 years since diagnosis. The other one suffered from aggressive lymphatic cancer that has already spread throughout her whole body but looks very healthy now….already coming 7 years after diagnosis.

‘You look so tired‘! I heard a friend said to another friend.

‘Yes, I am. I have been so tired lately’, came the reply.

A few hours later, I met another friend who looked tired and complained about her tiredness. She said, ‘I am so tired and I feel so sleepy. But when I lie down to sleep I can’t sleep well.’

Met another friend later and she said, ‘I’m so tired that I can lie down anywhere to sleep. All I want is SLEEP!

All over, I watch people and notice the rising tide of tired or fatique looks, puffy eyes and dark rings around the eyes which I call panda eyes. This not only happen to adults, both men and women, but to children too. There’s endless complain about tiredness. But WHY?
