It’s still Chinese New Year. To those who are celebrating Chinese New Year I hope you had an awesome time with your family and friends. Over here in Aberdeen, it’s very quiet. However, I did have a great time with my family and friends to celebrate this year of the dragon. We had a pot luck party in church over the weekend and a fun ladies pot luck lunch on the first day of the new year and a few other parties. With so much eating and merry making, I sure need more badminton to burn off the extra calories! Have been playing many hours a week….*big smiles*. I hope you keep up with your regular exercise. And if not, it’s never too late to start. Regular exercise and healthy, nutritious food are important for good health.

I was so thrilled when I made the Healthy Chocolate Beetroot Cake (dairy free) the previous week. The only disappointment was that the red colour disappeared after baking as you can see. But I must say I am really thankful to LeQuan of LuvToEat when she suggested that I use white chocolate instead of cocoa. Aha…that’s right! I have to try that. So, you see, the thrill and excitement in making healthy cakes using beetroot continues….*big smiles*.

No more cakes for tea time….sigh. I am still thinking of the dairy free carrot cake that I made last week….so healthy and delicious. I got up the other morning feeling sleeping and a little lazy but wanted a piece of cake with milk. There was a bunch of beetroot…yeah. What about beetroot cake? I googled it. Yes, there’s such a cake called chocolate beetroot cake….wow! I read through a few, thought about it, adjusted the ingredients and method to make it healthier and easier to make.

I am not sure how many started off trying to eat healthy at the start of every new year but along the way, it somehow didn’t carry through. If you had carried through well last year, I am really happy for you. I’m sure you will keep up with that. But if not, you still have this year to try, like me……*grin*. In general, I do keep to a healthy diet and healthy living. That doesn’t mean I don’t enjoy all the so-called unhealthy food. Of course I do, with great excitement……*big grin*…..but only on special occasions. There’s always room for improvement, right?
