Landed….landed….landed….at last, back to cold Aberdeen! I had been away back to Malaysia to visit families and friends, on top of enjoying all the best food there. I was away for about 3 weeks. I thought it would be a relaxing time but how wrong. It was all quite a madness….but good and fun madness…..*big grin*. I brought along my laptop with good intention of blogging but my good intention didn’t materialise with actions…..oooops. Just too busy with so many things. In short, time passes too fast!

I am still suffering from severe jet lag…….arrrrrggghhh. I feel tired and sleepy all the time. My head feels groggy as I type away……..hmmm. Looks like my head is trying to combine the sleeping time here and the sleeping time in Malaysia, which means I will be sleeping most of the time….haha. I need to keep this post as short as I can and write about my trip next week.

I had been sleeping like a baby yesterday. I slept many hours during the day and before dinner, I was very sleepy again! We had very early dinner and went to bed after that. I know, we should try to stay awake but then we couldn’t. How annoying is that! Then, by 3 am I was awake…..oh no! My head feels heavy and my body still feels tired but I can’t sleep…..sob sob. My best place would be the kitchen. Yes, the kitchen. My cosy little kitchen. With so much time, I can prepare something nice before everyone wakes up. I have been craving for some Chinese pancakes like my Chewy Chinese Scallion Pancakes. But this time I’m going to make it differently.

Before I left for vacation, I received 3 tins of SPAM. SPAM has always been my favourite, whatever way you cook it. I seldom eat canned food but this is one that I would go for every now and then. So, you can imagine how thrilled I was to receive them. We grew up eating a lot of canned luncheon meat which is similar to SPAM. But SPAM tastes a lot better. In Malaysia, SPAM is very expensive! I’m glad it is quite cheap here.

I don’t have spring onions, also called scallions, but I had a big bunch of coriander. I love coriander. I’m going to make my chewy pancakes with SPAM and coriander. I can imagine how delicious it would be. I was right. My whole family liked it very much. It wasn’t difficult to make but it does take time. Just perfect for my jet lag problem!

I used both the white and wholemeal spelt flour here for its health benefits. But if you can’t find spelt flour at your place, you can just replace it with the normal plain flour. Spelt flour is very expensive in Malaysia, as expensive as RM50 per kg!!!! That’s about £10! It costs a little less than £2 here at Sainsbury.

Here’s my simple and easy SPAM and Coriander Chewy Spelt Pancakes recipe.

Ingredients
200g white spelt flour
70g wholemeal spelt flour
1/2t oil
1/4t salt
80g boiling water
100g cold water
a handful of coriander (washed and chopped)
1/2 tin or 170g of SPAM (mashed and lightly fried)

Put the flour into a mixing bowl. Add the oil and salt. Pour in the boiling water. Mix lightly with a pair of chopsticks. Add the cold water and knead into a dough. Leave to rest for 30 minutes.

Divide the dough into 3 pieces. Take one piece and roll it out quite thin. Spread some oil on the surface. Sprinkle 1/3 of the chopped coriander and 1/3 of the SPAM.

Roll up like a swiss roll. Pull gently to make it longer. Then roll up from one end to the other. It looks spiral shape, like a snail. Do the same to the other 2 pieces. Add some flour if it’s too sticky. Leave to rest about 30 minutes.

Heat up some oil in a frying pan. Take a piece of the rolled up dough and flatten with a rolling pin. Panfry it using medium heat, until both sides are golden. Cut and serve.

I love to tear it with my fingers and eat as it is. I think it’s more fun and tastes better. That’s how country folks eat…..*big smiles*. You can serve it with dips if you like but I prefer eating it just as it is. The SPAM makes it very delicious and I love the beautiful aroma of the coriander. They are perfect combination. If you don’t like coriander, you can replace it with spring onions or even other herbs.

We had it with 2 soft boiled eggs each. What a good, healthy breakfast! All because I couldn’t sleep……*big grin*. Hope you will give this a try if you love SPAM and coriander. This pancake is really good for any time, as a starter, as snack, for parties, picnics etc etc. You won’t be disappointed I’m sure. You can thank me later…..*big grin*

Who gave you SPAM? Claire? From Singapore? They’re much cheaper there…compared to NZ even. Hmmmm…from the look of it, I can tell that it tastes absolutely divine!

Oooo…how terrible ! Yeap, it was pretty annoying when you’re feeling tired & sleepy all the time. Wow…didn’t know you were back home! UNDI~ke??? haha… Anyway, we catch up some other time. Take care & do keep in touch.

Your pancake looks delicious. Would love to try the recipe using plain flour. Coriander is expensive now . The other day I bought one tiny stalk of coriander for 50 sen! Thank you for sharing.

SPAM reminds me of my Grandma. She used to cut the spam into half inch thick slices, pan fry them till crispy, then add in some cracked eggs to panfry with the SPAM. I used to love it and then for some reason started not liking SPAM anymore - weird.
Love how you’re not afraid to try new things in the kitchen. I’ll bet these pancakes tasted delicious with the SPAM. Keep up the creativity in your cooking. Hope you recover from your jet lag soon.

@suituapui - Haha….not Claire and nor from Singapore.. They were given by the SPAM company. I would laugh so hard if Claire gave me these….haha. It’s a lot cheaper here….phew :D I need to make these pancakes again. They are just SO good…..mmmm
