Moist and delicious chocolate espresso cake

COFFEE! I must say I really like coffee. Just the mention or the thought of it would make me want to run to make a cup. But often I have to jam the brake on my cravings otherwise I will look wide eyed the whole day….haha. I may end up not sleeping and baking the whole night……*big grin*.

I think this coffee thing must be in my genes because my parents love coffee. I started drinking when I was very young. My gosh…those roasted coffee back home is so powerfully irresistible. I remember my mother would make a BIG jar every morning. It’s just coffee, sugar and of course water. And the aroma would fill the whole house! Life was simple then. My mom didn’t know how to make cake. Our favourite way to enjoy our coffee is to dip hard biscuits or Chinese cruellers (’you tiao’) into the coffee. That’s heavenly!

My dad always told us that a successful coffee shop, or cafe, depends solely on its coffee. If the coffee is good, there’ll be lots of customers. If the coffee is not good, few people stay. He said coffee is more important than the food served because it is the coffee that attracts the people in the first place, especially coffee drinkers. I think I agree with him.

So you can imagine how excited I was when I received a packet of premium espresso ground coffee from ESE Pods recently. I opened it and the beautiful aroma hit me instantly. From the smell I know it’s good quality stuff. Of course, I had to make a cup of coffee first. I don’t like the bitter espresso in the cafe so I made latte. Mmmmm….that was so good.

But that’s not all that I like about coffee. Coffee cake is always one of my top family favourites. I have to use this espresso coffee to make a coffee cake. I had a very good coffee cake recipe but I wanted to try a different one. The easy way is to google it. I found one that sounds really good. I adjusted a little to the ingredients. The original recipe is from Very Best Baking.

Ingredients A
4T espresso coffee powder
100ml boiling water
100ml buttermilk

Put the espresso into a coffee jar which comes with a coffee sieve inside. Add the boiling water. Let it sit for about 5 minutes. Then pour it out. If you don’t have a coffee jar, then you need a fine coffee sieve.

Ingredients B
250g butter (softened)
4 large eggs
1 & 1/2 C packed light brown sugar (I used muscovado unrefined light brown sugar)
1/2t salt
120g dark chocolate, melted (I used a good quality one with 81% cocoa)

Put everything into a mixing bowl and beat until light. The length of time depends on how powerful your mixer is. I just look at the colour change and also the texture.

2C flour (I used spelt flour)
1t baking powder
1/2t baking soda

Add flour, coffee and buttermilk

Sieve Ingredients C into the chocolate mixture above. Add the coffee and buttermilk, too. Beat on low speed just to mix well.

Pour the batter into a paper lined baking tin. Bake at 180 degrees Celsius for about 35 minutes or when a skewer inserted into the centre comes out dry. It will take longer if you use a deep cake tin. I always like to bake my cake in a low tin because it bakes faster and more evenly baked.

The texture of the cake is fine and moist and full of coffee and chocolate smell. That’s just what I want! It tastes even much better the next day. If you like, you can make coffee cream to sandwich and to cover it, like in the original recipe. But this is good enough for me with a cup of coffee. Coffee cake with a cup of coffee always makes me smile. How easy to cheer up myself………haha.

Now I wonder whether you have some food addiction like me. I quite like my ‘little’ coffee addiction….*big smiles*. If you love coffee like me and love a really good coffee, why not get some premium coffee from ESE Pods. You can save a lot of money if you are a coffee drinker. Just make yourself at home instead of buying from Starbucks, Costa, or any other such places. ESE Pods sells ready ground coffee, coffee beans and coffee machines. You can read more on their website. I have a coffee machine. Sometimes I grind my own coffee beans. I think it’s quite therapeutic to grind coffee as you see the hard beans turn into powder. Another simple and easy way to cheer up myself….haha.

Funny I could almost smell it. Who doesn’t want coffee? and yeah just the mention of it wakes me up hahah.

Funny that you mentioned you started drinking coffee when you were young. I did exactly the same thing and I get addicted to coffee since then. Should I double doze if I eat this moist and delicious looking chocolate espresso cake with a cup of coffee? Haha, I would never go to bed. :) Have a great week, Mary!

hi mary, i eat more coffee cakes than drinking coffee. That’s becos my stomach is not able to tolerate coffee it seems but i do drink coffee once in a blue moon..LOL! you know..ipoh white coffee :)
yeah, there are still a lot of people , young and old enjoying their coffee with the youtiao and also the ham chin peang..that’s actually very nice.

I was laughing when i saw that lady picture on the coffee pack. haha! Mmm..chocolate espresso cake, just the name itself sounds addictive, i would enjoy eating it too even without the coffee cream! Nice one, mary!

Howdy Mary! It was really fun reading your post whenever I drop by. You make me smile. :o) Yeah, me too! I started drinking coffee when I was very young age as well. Can’t even remember when I started it. I remember my mom used to hide the coffee powder away from us but I still management find them. hahaha…. No jokes at all. haha…. See, how irresistible they are. Oh yes, chocolate and coffee - a delightful combination. I’m not a daily coffee drinker (tea’s my poison), but I have serious cravings once in a while - like this morning, I had a cup with cardamom seeds and a slice of dense fruitcake.

I’ll save this for the next craving day!
