Delicious spicy salmon and vegetables fritters

One of my top favourite fish is salmon. Scotland is famous for its salmon. They are so fresh and delicious. It’s good to eat more fish as they are good for health. Most of the time I cooked salmon in curry, marinated with curry powder and pan fried. Besides that, teriyaki salmon is also one of my top family favourite. But then, I want it cooked differently this time. So, I thought of salmon fritters after I made some prawn fritters a short while back.

These spicy salmon and vegetables fritters are very easy to make. You can always make more, store in the fridge and reheat in the oven whenever you need them. It comes so handy if you have unexpected visitors. They are also perfect to bring to work, for picnic or for parties. They are a great starter to any meal, too. With your favourite dipping sauce, you’ll be cooking this very often I’m sure. It’s a smart way to hide vegetables. My youngest daughter doesn’t like vegetables but she will eat these without complaints…*big smiles*. You can make it all vegetarian too if you prefer.

Here’s my simple, easy and quick recipe.

Ingredients A
3 eggs
2t sugar
1t salt
3/4t pepper
1T light soya sauce
1C water

Put all of Ingredients A into a mixing bowl and whisk until combined.

Ingredients B
2C flour (I used spelt flour)
1t baking powder

Add Ingredients B to the egg mixture above. Mix well into a batter.

Ingredients C
300g salmon (diced)
3 stalks spring onions (cut into short sections)
1 big onion (peeled and chopped)
3 chillies (de-seeded and chopped)
(I used green chillies but you can use red ones or a mix of both)

Add salmon and vegetables into batter

Add all of Ingredients C into the batter. Stir to mix well

Add some oil into a frying pan and scoop spoonfuls of batter into the il and pan fry. When it’s golden on the underside, flip over and continue to fry. When it’s golden, dish up.



Let it cool down for a while before enjoying them.

Mmm…I’m all for shrimp or salmon fritters. These look yummy in my tummy, Mary. I’ll bet clam fritters would taste yummy as well. These would make a great after school snack for the kiddies. Thanks again for another wonderful recipe. Hope you have a lovely weekend.
