At last all the busyness of the Christmas and New Year season is over! It was all so much fun going to friends’ parties and also parties at home. It was almost like endless cooking and eating. While the past couple of weeks had been so full of joy and fun, it’s good to get back to my usual life routine. I had been missing my juices so the first thing that I really want for the new year is my favourite carrot and apple juice (pictured above). That’s simply the best…..so healthy and refreshing! Right, back to my healthy cooking and healthy eating. I love simple, easy and quick cooking. I cooked my best sambal ikan bilis the other day. Well, this one is not simple and easy though. But once you have it, you can keep it in the fridge and eat it for many days although mine can’t last many days……*grin*. My daughter said it’s the best, too. It was SO good with rice. In fact, anything! But the very sad thing is I did not jot down the recipes…..*BIG sigh*. I was physically exhausted after all the parties and just wanted something spicy and delicious to perk up my appetite. I didn’t think it would turn out nice. When have I been so negative huh! But to my great surprise, it was just too delicious for words…..right spiciness, right aroma and right taste. What a great regret for the start of the year! A lesson learned. Seems like I never learn my lesson because this is not the first time….*big sigh*. Am I alone? If you are grinning at this point, you just make me feel better….haha.

See what I ate the ikan bilis sambal with. Like I said, it’s good for anything! Even just the sambal and rice, nothing else, is enough to bring lots of smiles. Now that’s very Malaysian…..hehe. My family has been eating a lot more rice with my sambal! There’s only a little left so I need to cook it again soon. This time I MUST get it right because I only have one portion of the ikan bilis left. Keeping my fingers crossed!

I love to cook more fish for my family. So, we will continue to eat more fish. It’s so healthy. Trouts here are very fresh. You can tell by the eyes and they are not expensive. It’s very easy to cook. I always bake it at 200 degrees Celsius for about 10-12 minutes. Usually I sprinkle some salt over it before baking. It tastes very delicious. The only downside is that there are a lot of bones so need to be careful. I enjoy picking out the bones actually. I know where the bones hide….*smiles*. A meal like this one here takes about 15 minutes. That’s simple and quick, yet healthy and delicious.

I do hope that you are eating healthy and doing your regular exercises. And if you haven’t, it’s never too late to start. It takes time, effort and discipline but it’s all worth it at the end of the day. A little changes here and there will go a long way. Please don’t make excuses. The common excuse that I hear all the time is, “I don’t have time”. But if we really know that health is the most important, I’m sure we will make time for it. I know it’s very important to be busy making money but all the more important is to have the health to enjoy it.

I really like your “fish” rice plates! Just the kind of meal I enjoy with fish and veggies. Salmon, trout, ikan bilis (plus sardines) are my regular go-to fish to cook at home too. The ikan bilis sambal looks too good.

Hi Mary,

Ikan bilis? Hmm…that reminds me of somebody. Haha. I must try your ikan bilis with sambal sauce some day. Actually I don’t even know what sambal sauce tastes like. They sell it in the stores here in jars but I’ve never tried it. Quite curious actually. I’m sure your ikan bilis with sambal tastes delicious. I’m not a huge fan of anchovies but I’d like to give this dish a try one day. Btw, your trout is huge. Lol. In not used to seeing a whole trout like that with head, tail, and skin on. We usually buy fillet when we buy fish b/c of the kids. Just made trout the other day. Kids loved it…I was a happy Mommy b/c I know fish is so good for them. Another mouth watering post, Mary.
