Christmas is only a few days away and I had just started any food preparation yesterday. Had been going out too much!….badminton, friends, cafes. It has been all fun and exciting but I need to start cooking! Oh, quite stressful to think of it. I told myself that I really need to get started. I went out just for a little while yesterday and quickly came back. I need to make chilli sauce and cranberry sauce for the meat dishes for my Christmas parties.
Before I got down to cooking, I told myself I need to finish up decorating the Christmas tree first. It looked so bare and ugly. I dressed it up at last…..wheeee! Look! Isn’t it gorgeous? I actually sat there for quite a while admiring it. It was fun putting up the lights and other decoration stuff. Feel proud of myself for having done it…a big pat on my own back! BIG SMILES.
Then I started cooking my garlic chilli sauce and cranberry sauce. Recently I bought a bottle of Thai garlic chilli sauce the supermarket. I must tell you. It is just SO good. I pour it over all types of meat and even eggs. The bottle finished in no time……hmmm. Just went to buy another bottle the other day. I know, I know, there are lots of preservatives in it but this is just too good to miss out. So, I decided to make my own…..cheaper and healthier.
I just wonder if you ever read the ingredients each time you buy food from the supermarket. I do that most of the time. I make sure my girls to do that too. Want to know what the ingredients say? Just take a look at the picture here. There are so many items I don’t even know what they are!! I just wonder whether you know.
Making chilli sauce is actually super easy. The main ingredient is fresh red chillies. Put all the ingredients into a blender and blitz. Then pour into a pot to boil for a while. That’s it! How easy is that? I’m sure anyone also can do. But my chilli sauce is a lot hotter than the one I bought. You can remove the seeds if you want it less hot.
Here’s my easy Homemade Garlic Chilli sauce recipe.
500g fresh red chillies (remove seeds if you want it less hot)
2 whole garlic (peeled)
1 big knob of ginger (maybe about 60g)
2 pieces chicken stock
2C of water (more if you like it more watery)
Put all of the ingredients into a blender and blend until smooth.
Pour into a pot and boil for a while. Turn off the heat and let cool. Serve with your favourite meat.
This homemade garlic chilli sauce is good for any meat and fish, even eggs. You can add it into other sauces while cooking other dishes or even when frying noodles or fried rice. It’s so cheap to make it yourself. Best of all…..NO preservatives and additives.
