Delicious spicy roast potatoes

Christmas will soon be here! I attended an early Christmas party last week where there were roast potatoes. I found them very delicious. I told myself I must try, but with a Malaysian kick to it…spicy ones! And sure enough I did. I received some Scotty Brand Kestrel potatoes and thought it just perfect to try out roast potatoes.

I used my homemade chilli oil and Nando’s Peri-peri chip sprinkle to spice it up. I cooked it for dinner the day before. We all liked it very much. They are quite crisp on the outside and so soft on the onside……really good! A friend so happened to drop by for a visit. Lucky man! He got a few pieces left to try and he liked it very much……big smiles. To make the chilli oil, just fry some dried chillies and chopped onions in oil. That’s it…..chilli oil!

Actually I am not a big fan of potatoes but I have come to like potatoes these days. So is everyone in my family. My family loves Scotty Brand potatoes for it’s texture and flavour. I used to cook potatoes only in chicken curry which is still my favourite but I have learned to eat them in different ways. I have never cooked roast potatoes before but now I can cook them for Christmas this year. Potatoes are cheap, easy to cook and very delicious.

I must say cooking potatoes for me is just such an interesting and fun adventure. I never knew there are so many different types of potatoes until I came here to Aberdeen. There are big ones, medium ones and small ones and they all come with different names. Quite confusing for me actually…haha. But these days, I’m smarter. I just go for the ones with a terrier doggie picture on the packaging…..Scotty Brand potatoes….*grin*.

Here’s my simple and easy Spicy Roast Potatoes recipe:

Ingredients
Scotty Brand Kestrel Potatoes (peeled and cut into chunks)
chilli oil (amount depending on how spicy you want it)
chips sprinkle
olive oil
butter
salt

Boil the potatoes

Put the cut potatoes into a pot of boiling water and boil for about 10 minutes under medium fire. Test that they are not over cooked. Use a skewer to test. It should still have a little crunch in the centre. The potatoes may be of different sizes. I cut the big ones into quarters and the small ones into halves.

Remove and let it cool down for a while. Use a fork and roughly scratch the outside.

Add seasoning, oils and butter

Add some olive oil, some chilli oil and 1-2 tablespoons of butter to it. Then sprinkle some salt and chips sprinkle. Mix gently so that the potatoes are well coated.

Spread out to bake

Spread the potatoes onto a paper lined baking tray.

Bake at 220 degrees Celsius for about 15-20 minutes until the outside turns golden. Remove and serve with your favourite roast. They are just so good…..crunchy on the outside and so meltingly soft on the inside.

Potatoes is also my favourite in chicken curry. I just have to try it. Knowing how floury they are, I added them to the curry about 15 minutes before the chicken is cooked so that they don’t break apart. I must say they are really good in curry too. I had a friend over for a meal and he likes it very much.

I also gave some of the Kestrel potatoes to a friend as her family loves to eat potatoes. I was invited to her house for lunch yesterday. She served a lovely dish with the potatoes added. It tasted SO good! Another friend was there. She liked it so much she almost finished the whole plate….haha

So, why not have a change for this Christmas…..spicy roast potatoes! If you like spicy food, I know you will like this one. Have fun cooking. The more you cook, the more you discover new food and new ways of food.

I love potatoes! Yes, they can be cooked in many varieties! hey, the nando peri peri sauce, they are sold over there? too bad they are not sold in our place here otherwise i sure go grab some bottles! :)

Mmm…spicy potatoes! That’s another twist on potatoes I haven’t tried. Still need to try making my own chili oil also. This would be a wonderful side dish for anything. Another lovely recipe, Mary. Thanks for sharing.
