Delicious and nutritious homemade chicken essence

I have 2 exciting news to share with you here. One is how to make a Super Nutritious Chicken Soup and the other is a giveaway sponsored by Scotty Brand.

My aunty from Malaysia was such a blessing to me when she came to visit me for a week recently. One of the things that she taught me was how to make nutritious chicken essence. She told me it’s very good for health. I remember my mom used to make that when we were back home. But I have forgotten all about it ever since I left home after I went to university. Life was just too busy. I’m so glad my aunty mentioned it just before she left. She taught me how to do it. I was so excited to try. I had made it 3 times since she went back about a week ago! I need a big pat on my back for a job well done….*big smiles*.

This soup is reputed to boost your energy level, especially good for those who feels weak and lethargic due to study or work stress.

So, here’s my Super Nutritious Chicken Soup Extract recipe. It’s actually very easy and simple to make except that it’s very time consuming. It takes minimum 4 hrs to steam. My aunty said the best is 8 hours. So far, I had only managed to steam it for 4-5 hours. You’ll get 3-4 rice bowls of soup depending on the size of the chicken and also whether you add wine or not to the chicken before steaming.

Ingredients
1 big chicken
some red dates
some black dates
some dried longan
some wolfberries
wine (I used about 1C)

Invert a bowl (I used transparent pyrex) into a big dish like corning ware. DO NOT use metal dish/pot. Wash the dates, longan and wolfberries and put it around the inverted bowl.

Cut up the chicken and lay it around the bowl. Put a little stand at the bottom of a big wok. Add water. Put the dish of chicken onto the stand. Cover the wok and bring the water to boil. Once the water boils, lower the fire until low. Let it steam for 4-8 hours. Remember, my aunty said the best is 8 hours. Add more water if the water dries up. The best is to use organic free range chicken. I used corn fed free range chicken here which explains the lovely yellow colour. You can also use guinea fowl which is a wild game.

After 4-8 hours, turn off the fire and leave it there. Try not to open. Just let it cool down by itself a few hours. Something most amazing will happen. If you had peeped into it half way through, you will find that there’s lots of soup around the bowl. But when the dish cools down, all the soup will be sucked into the inverted bowl as seen just above here.

The meat will be very dry and tasteless. The soup is called ‘chicken essence’ and is highly nutritious.

Don’t drink all the soup. That would be too much. I suggest that you drink 1 rice bowl and leave the rest to the next day or two. For me, my whole family drink it. They like it very much…..very tasty even without any seasoning. If you don’t have the red and black dates, longan or wolfberries, you can omit them. They are very good for health though and add nutrition to the soup.

Ginger wine is easily available in the supermarkets. I love to use Stone’s Ginger Wine.

D.O.M. liquor

D.O.M. liquor

D.O.M. is another very good wine for making nutritious chicken soup. It is a herbal liquor and reputed to be very beneficial to health. You can get it in the supermarket too. I had made a very delicious ginger wine chicken soup using this wine. In fact, just yesterday, I taught a friend how to make this soup. Her husband feels very weak and tired lately due to stress from work. I took her out to buy chicken and wine, came back and showed her how to make this chicken extract. I lent her my wok, and everything. She took back the whole thing to steam. I really hope this will help to give him back some energy.

If you are feeling low in energy, tired and weak, do give this a try. Make this soup regularly like at least 1-2 times a week. On top of that, freshly made juices are also important. I’m a firm believer of Chinese tonics & been drinking them from young. Love your recipe on extracting the essence. However, DOM is something that I just can’t appreciate.

Saw a DOM’s ad many yrs back & bought a bottle. It was super sweet & I couldn’t even swallow. Passed to my hubby & he spat it out immediately. Lol! Tried giving it to my mom, but was also rejected. Hahaha! I can never forget that aweful taste till today :<

I used to cook this soup too when the boys were young, they love it then but somehow, after they have grown up, I have forgotten about this soup lol! Must try cooking it again, for myself this time since I tend to fall asleep after lunch!

So cool how the soup gets sucked into the bowl. I’d make this soup just to see that. Hahaha. Yeah, “somebody” always says I’m so easily amused. The other ingredients you used here are very healthy as well. I love dried logan in soup. No wonder this soup is soup good for you.

Whoaaaa….this is a superb & expensive soup. I normally pound the meat together with bones till nearly mashed. Sweaty task and that’s why I seldom make it. haha…. What a lazy wife I am.

The soup looks lovely! So healthy and nutritious too. I cooked lamb stew. First time I’ve tried Scotty Brand products, and I must say their potatoes are amazing! We used it to make mashed potato for another meal as well and it tastes better than other potatoes we’ve had. Even just plain on its own!

it’s been such a long time since i last made this. Over here, we have a special kind of bowl that is especially used for making chicken essence. The bowl has 2 layers, first layer has holes underneath to catch the chicken essence and soup when steaming, all that will be collected in the 2nd layer of the bowl.
