I can’t wait to share with you this most delicious and healthy soup that I made yesterday to share with a lovely friend. She liked it very much. It’s Beetroot Carrot Soup. Not only does it look sexy and healthy, it tastes SO good. I really love the colour and taste of my soup! This soup is perfect for vegetarians, too.

However, when I served it to my husband, there was total silence….haha. You can even hear a pin drop! The face tells it all….haha. He had no choice but to drink it otherwise there’ll be no dinner for him…..hehe. He better learn now because I will serve him this soup when Valentine’s Day comes….*big smiles*. For him, soups should be clear and not coloured! Well, he has no choice. He just has to eat what the cook serves……*big grin*. Otherwise he has to cook dinner himself!

Beetroot and carrots are one of my favourite vegetables. They are highly nutritious. They are awesome for juicing……power packed nutrients in a glass. The juice looks so beautiful. The one that I use, which I have been using for more than 15 years is the masticating type of juicer. It gives high quality juice.

Beetroot has always intrigued me. I even made cakes with it. Inspired by the red velvet cakes, I tried using beetroot to get the colour. I didn’t manage to get the bright red colour but definitely I got a very healthy, delicious cake. You can check it out at:

Still not too satisfied with the colour, I tried another time last week. This time I didn’t bake it but steamed it. I thought a lower temperature may retain the bright colour. But no, I was wrong. The colour didn’t remain as bright as before baking but then the cake turned out VERY moist and delicious. Will be posting that soon. So stay tuned.

Back to my Healthy Beetroot Carrot Soup. This is a very easy soup to cook. Here’s my simple recipe.

2 carrots
2 beetroot
1 big onion
1/2 whole garlic
a small knob of ginger

Boiling all the vegetables

Peel everything and chopped. Heat up some oil in a pot. Fry the garlic, onions and ginger until the onions turn translucent. Add the beetroot and carrots. Add enough water to cover the vegetables. Boil until the vegetables turn soft. It doesn’t take long. Test with a fork.

Let it cool down a bit and pour everything into a blender and blitz until smooth. Pour back into the pot. Bring to boil. Add seasoning to taste. I added some Kikkoman soya sauce and fried shallot oil. Serve garnished with some coriander. Some crusty bread would go well with this soup.

It was so good I almost licked the bowl clean…….*grin* I will definitely be cooking this soup again soon.

Another week is coming to an end soon. I hope you have been having fun and doing what you enjoy doing while not forgetting to eat healthy and live healthy.

I have been doing my leg exercises everyday while having weekly appointments with my physiotherapist. I’m really glad I can walk much better now. I even went to watch my friends play badminton at the beginning of the week. What joy to catch up! Wait…it won’t be too long before I can join them again!

Hi Mary, what a delicious soup and love the colour very much too. Honestly, I don’t really excited about the taste or flavour at first but I’ve tried to add in an apple to wipe away the unpleasant flavour of beetroot. It works very well.

Love the colour, nutritional value, and simplicity of this soup. Never tried cooking with beetroots before, but I live them pickled and in salads. Must try this soup some time.
