Delicious chocolate cookie cake

I think I have an overload of chocolate in my house lately. I have been receiving chocolates from friends….so sweet of them! They are all some of the best chocolates that I have tasted. I love chocolate but I don’t think I can eat all of them. So, I decided to make desserts out of them. I tried to make cookies out of it. But then the batter turned out to be not thick enough for cookies and yet not soft enough for cakes. But with baking soda inside, I guess it would work anyway. Let’s see. It did come out special. I’m just glad that I used up 2 boxes of chocolates……*big smiles*

Here’s my easy and simple Chocolate Cookie Cake recipe. Melt and mix is always my top favourite way to make cake or cookies because it’s so quick and simple and little washing up to do. Just another way of saying ‘lazy’….*big grin*. I actually made this to share with friends and all was gone. Shows that it’s delicious.

Ingredients A
250g butter
1/2C sugar
1/2C brown sugar

Melted butter and sugars

Melted butter and sugars

Put all of Ingredients A into a pot to melt. Keep stirring until the butter is melted. Cool.

Ingredients B
4 eggs
1T vanilla
1/2t salt

Put all of Ingredients B in a mixing bowl. Whisk until mixed. Pour into the butter mixture above.

Ingredients C
3C flour
2-3C chocolate (chopped)

Add flour to the butter and egg mixture. Mix well. Finally stir in the chopped chocolates. Mix well and pour into a low baking tin lined with baking paper.

Bake at 180 degrees Celsius for about 20-25 minutes or when a skewer inserted in the centre comes out clean. It’s very delicious served warm or at room temperature.

So, if you have chocolates that you don’t know what to do, what about making this easy, delicious cookie cake. I still have a few boxes of chocolate. I will be making this again soon for parties.

I visited my physiotherapist today and he told me that I can look forward to October to get back to badminton…….yippeeeeee! You can’t imagine how happy I was to hear that!……*big smiles*. That helps my days to pass by faster!

oh mary, it’s so good that you’re almost have recovered and will be back to your badminton soon! congrats! did you watch the badmintons finals there? btw, is the texture of this cake a cross between a cake and a cookie? the crumbs look very nice!

@lena - Yes, indeed very glad! Oh yes, I watched the badminton final. So nerve-wrecking to watch. So sad Lee Chong Wei lost, so narrowly :( Yes, the texture of this cake is like a mix of cake and cookie but very delicious.
