Life has been busy and my food seems to be getting simpler and simpler! As long as no one complains, I am safe….*big smiles*. The most important is to put healthy and delicious food on the table, even if it’s very simple. So far so good, no one has complained yet…..*big relief*. As long as I don’t serve the same thing everyday, I think I can still walk tall around the house….*grin*.
Mushrooms are my favourite. They are quite expensive back home in Malaysia but over here in UK, they are actually quite cheap. Sometimes they go on sale and that’s even cheaper. Just the other day, I bought 2 packs of chestnut mushrooms. Thought of making a quick dish for dinner…something creamy, a little spicy and aromatic. I was glad it turned out very delicious. My children who are not very keen of mushrooms even said it’s very delicious…..yay! The red wine gave a lovely flavour.
Here’s my simple creamy mushroom recipe:
500g chestnuts mushrooms (thickly sliced)
1T olive oil
1 bunch spring onions
1/2 whole garlic (peeled and chopped)
1t curry powder
3T red wine
1/2C reduced fat creme fraiche
a small bunch of coriander (chopped to garnish)
Heat up the olive oil and the butter in a frying pan. Add the garlic. Fry until fragrant. Add the mushrooms. Keep frying. You need to use a higher heat to bring out the aroma. Mushrooms cook very quickly so a short quick stirring would do.
Add the curry powder and chopped spring onions. Mix it well. I didn’t add more curry powder because I think too much would spoil the taste and flavour. Just a little would do.
Add the creme fraiche and wine. Season with salt and pepper. Mix well. Turn off the heat. Dish it up onto a plate. Garnish with the chopped coriander and serve hot.
We had it with roasted spring chicken and mashed potatoes. it was very delicious. I’m sure it would be really good scooped over pasta or noodles. I just love the fragrant smell of red wine and the light creaminess to it.
The mashed potatoes were made from Kestrel Potatoes from Scotty Brand. I just mash it with some butter, garlic oil and chopped coriander. It was very delicious. I find this potato makes a very delicious mash. You can get this potato from all the major supermarkets here. I had used it to make Salmon Stovies and also Chicken Curry. The taste and texture are just lovely. My family likes it very much. If you look at the mash, it’s more floury which is perfect for dishes with sauce.
The cajun chicken is very simple and easy to prepare. You can get the spring chicken (or poussin chicken) from Sainsbury. They always come in 2 in a pack. Just season with cajun seasoning. Leave it to marinade for a couple of hours, then bake. It takes about 25 minutes to bake at 200 degrees Celsius.
