Finally my birthday celebration is over! That’s really long huh….*big smiles*. We had the final one over the weekend. My girl is finally back and we had a wonderful family time together. My family wanted to go out and eat but I preferred a home environment and home cooked food, even though it may be simple. The birthday girl has to win!….*grin*.
It was just hilarious when my family tried to sing the Happy Birthday song like what you hear at TGIF. If you do not know how it’s like, just try one time celebrating your birthday there. You’d totally enjoy it. It’s VERY fun. A whole group of it’s staff will surround you to sing that silly birthday song…loud and fast. And everyone around will enjoy looking at you….*grin*. Some may find it embarrassing but I thought it’s so exciting and fun!
My girls were very busy so I said I would cook a simple meal. They bought a beautiful 5 layers chocolate birthday cake for me. Beautiful in look and texture and covered with cheese cream…..wow! We liked it so much that we had 2 slices each….mmmm! We usually don’t eat so much cake but this one is irresistible. After one slice, we just couldn’t resist another slice even though we were very full. Now I am going to try and make this cake……5 layers chocolate cake……*smiling*. That reminds me of the chocolate millie crepe that I made for my birthday. I think there were at least 25 layers. I need to try my millie crepe again. Another beautiful many layers cake is the Classy Indonesian Layer Cake (Kek Lapis) which I made for Valentine’s Day last year.
My daughter loved spaghetti carbonara with crispy bacon. So I cooked it but I used linguine instead of spaghetti. I hardly buy bacon and cream so this is quite a treat for all of us.
I also cooked Peri Peri Chicken Goujons. It was a hit when I cooked it last time….very simple and quick to cook. Check it out at Peri-peri Chicken Goujons (Strips) - Better Than Nando’s for the recipe. My family was thrilled when they heard that I cooked this really delicious chicken.
And my best of all is the Stuffed Jumbo Mushrooms. That’s my first time cooking it. I have always wanted to cook this stuffed mushrooms. Finally I did it…yeah…..*big smiles*. Not too much work and it came out VERY delicious. I actually had fun making it and was really happy when my girl said that it’s even better than the peri peri chicken! I ate 2!….mmmm. It was just too good but then I felt so full after that. These stuffed mushrooms were just so juicy, moist and full of flavour and taste.
The mushrooms were on sale. I got them at 50% off……£1.50 for all the mushrooms! That’s cheap for such a big plate of fabulous stuffed mushrooms.
Here’s my simple and easy recipe for the Stuffed Jumbo Mushrooms.
500g jumbo mushrooms
250g chestnut mushrooms
As the name implies, these jumbo mushrooms are really big, 4-5 inches across. 6 pieces weigh 500g.
Remove the stalks from the jumbo mushrooms. Lay the jumbo mushrooms on a paper lined metal tray, top side facing down. For your information, initially I tried to dig it out with a knife but then my daughter taught me how to pull it off gently just with your hand. Sometimes we have to learn from our children, right?….. *shy smile*. Actually she was just playing with a piece of mushroom when the stalk came off. Then she found the trick! More brains work better, right?…….*wink*
Chop up the stalks finely. Slice the chestnut mushrooms. Put all of them aside.
1/2 whole garlic (peeled and chopped)
2 big shallots (peeled and chopped)
80g bacon (chopped and fried till crisp)
Put all of Ingredients B into a frying pan and fry until the garlic turns golden and fragrant.
Add the shallot. Fry until they turned translucent. Add the chopped mushroom stalks from Ingredients A. Fry for a while. Then add the crisp bacon and sliced chestnut mushrooms. Fry until fragrant and soft.
3/4t sea salt
1/2t pepper powder
1 handful grated mozzarella cheese
Add the breadcrumbs, salt and pepper to the mushroom mixture above. Mix well. Dish it up into a mixing bowl.
There’s always croutons at home because of my love for vegetable salad. I just put some into a processor and process until quite fine. Really simple to make them. Add the mozzarella cheese to the mushroom mixture and mix up with a spoon. This is the stuffing mix. Divide it up among the jumbo mushrooms.
Bake in a preheated oven of 200 degrees Celsius for about 15-20 minutes. Serve hot with some fresh green salad. Enjoy!
This is a great item for party. Not only does it look impressive and delicious but you can prepare it ahead and bake just before your guests arrive.
Note: You can omit the bacon and make it vegetarian. However, the bacon adds to the flavour and taste.
