Cherry cake with chocolate ice cream
How’s your weekend? I trust that you had a really good one. But what is a good one? For me, a good weekend is one where I don’t get into trouble with anyone……*big grin*. Sounds naughty and mischievous? Oh no, of course not…..*wink*. Have always been very good, only sometimes not…hehe.
I did have a lovely weekend, relaxing and had some good laughs and chat with friends. I even made myself a nice cake to reward myself after a very good afternoon of badminton. It was a cherry crumble cake! Cherry and Mary rhymes, right? I was happy when I made it so I will call it Merry Cherry Cake….smiling and singing as I made it! Nice name? Hope you like it…..still smiling here.

Ben and Jerry chocolate fudge brownie ice cream
Oh, then I was thinking of chocolate. Yes, chocolate ice cream. My girls bought Ben and Jerry ice cream…..chocolate fudge brownie ice cream. Might as well steal some to go with my Merry Cherry Cake. That is a VERY nice ice cream. But ssssshhhh…don’t tell them, ok? I must tell you, the ice cream and the cake is a great combo….mmmm. The cake was not sweet enough. My fault. I always cut down on the sugar. It was worse in this case because the cherries were sour. The ice cream make up for that perfectly. I’m sure it would go well with any ice cream or even custard. You can try that out if you ever make this cake.
This is a very simple and easy cake. For me, any cake that doesn’t need a cake mixer is easy. Hope you agree with me on this. And any cake that needs to separate the egg yolks from the egg white is hard for me. So, if you like something simple and quick, this is one to go for. And any cake with added fruits is a healthier one. So, I give you 2 good reasons why this is a cake that deserves some credit and one worth trying.

Frozen cherries
Oh yes, I used frozen cherries in this cake. A 1kg bag of frozen cherries only costs about £2. That’s cheap, right? You can use fresh ones if you like. I like to use frozen ones because it’s very convenient and much cheaper than the fresh ones. Just like my favourite blueberry cake, I used the frozen ones. They work just as well. If you like blueberry cake, you can check it out at Super Easy No Dairy Blueberry Cake. It was SO good that I made it everyday for about a week! These cherries look so plump, red and healthy that they would also be great for making ice cream, jam, coulis or jellies. You can try that. I love cakes with added fruits.
Here’s the Merry Cherry Cake recipe.
Ingredients A
2C flour
1t baking powder
1/2C sugar (preferably castor sugar)
3 eggs (lightly beaten)
1/2C milk
185g butter (melted)
450 cherries (I used frozen ones)

Cherry cake batter
Mix all Ingredients A (except the cherries) in a bowl. Don’t need to beat.

Spread cherries over cake batter
Spread into a tin lined with baking paper. Spread the cherries evenly over the batter, lightly pressing them in. Don’t you just love the colour! It gives such a cheery look…..*smiles*
Ingredients B
1/2C flour
1/4 castor sugar
65g butter

Spread crumble over cherries
Use finger tips, mix Ingredients B until like breadcrumbs. Sprinkle over the cherries. I think mine was a little wet but it still turned out very well.

Beautiful cherry cake crumble
Baked in a preheated oven of 180 degrees Celsius for about 30 minutes or until a skewer inserted into the centre comes out clean. Cool down first before cutting though I could NEVER wait…..just too tempting!….*big smiles*
I used a deep tin that measures about 11″ x 11″.
How’s your baking? If you have never tried baking, try this one. It’s easy. But if you are already baking a lot, then this is just too easy for you. I sure have a lot to catch up with you then. Baking is actually a lot of fun.

Just thought this quote is very interesting. It reminds me of a time when I took a friend’s dad to see an eye specialist. Right in front of our eyes, the doctor was googling about his condition and then tried to explain to us! I must say we must be very careful when choosing which doctor to go.
Oh yes, a friend just told me one story recently. His father, quite old now, is suffering from some health problem back in Malaysia. When they took him to see a doctor, the doctor told them that his dad needs to do dialysis EVERYDAY, costing a few thousand ringgit each time!!! Feeling very frustrated and helpless, they decided to take him to another doctor. This time, the doctor said that he has weak kidneys but he doesn’t need dialysis! You can imagine their joy.
I think the best is to try and eat healthy and live a healthy lifestyle. Homecooked food is still the best as I always say. Freshly made juices are very important for the body as they contain life nutrients which are easily absorbed by the body. You can read more about it in my Health section. On top of that, exercise is highly important for health. More than that, it helps to release stress and bring back the smiles. You’ll be more effective in your work. I just can’t tell you how good I feel after each badminton game. I feel and think fresh, sleep better and work better.
I managed to encourage a university student to come out and join us for badminton. So happy to see him last week. I am always happy when my friends start any form of exercise program. He came again yesterday to join us. That’s just so encouraging. He told me he suffered from so much pain the next day after his first game last week. Very normal. A painful price to pay for not doing any exercise…..*grin*. He said he caused a human traffic jam when he went for lecture the next day because he really had to slowly drag himself down the stairs!!! I can imagine the scene and laughed so hard…haha. He said every step needed 2 small steps. Now I hope he doesn’t cause another similar traffic jam when he goes to lecture today….hehe.
I do hope you’ll pick up a sport or other form of exercise if you haven’t. No excuses, ok? Let’s spend our money on healthy eating and sports/exercises rather than on medicine or the doctor. Do hope you have a wonderful week!

I always hear from my friends in UK.. they said food is very cheap over there.. esp those who cook at home… eating outside is expensive but home cooking is real cheap! sigh.. this post of yours is so tempting.. now i got to go down to take ice cream! ![]()

absolutely agree with you about exercise and eating right. can you believe i spend almost an hour doing my back exercises now? sheesh. not the type of exercises i wanna be doing though, much prefer badminton…oh well. speaking of which, don’t forget to put your racquet in your bag again ![]()

@claire - Yes that’s cheap. I bought from a wholesale shop. It’s more expensive if I buy from the normal supermarket. Very correct….eating out will cost a big hole in your pocket. The best is home cooked food….cheaper and healthier. Hope you enjoyed your ice cream

The weight of 1C depends on what you measure, different for different thing. 1C of water = 250g. 1C of flour = 120g. 1C of sugar = 200g. The easiest is to get a set of cake making measuring cups. I never like to use recipe in grams. The cup is so much quicker

I miss all those good-priced berries in UK! It cost a bomb in SG, even the frozen ain’t really cheap. I am sure this will work well with any tropical fruits too!
