Delicious seafood risotto

If you ask, “Who likes rice?”, you bet both my hands will shoot up immediately! I LOVE rice. I was brought up eating rice, 3 times a day. So, I continue to love rice, but not 3 times a day any more. I still eat rice for lunch and dinner most of the time. But I don’t mind skipping a day without rice if I have to, especially when on holiday somewhere.

I love seafood especially prawns. I love cuttlefish or squid, too, but hardly buy to cook it. It’s because I don’t really know how to cook. I can’t remember ever cooking a whole squid dish. I have eaten squid dishes cooked by my friends or in the restaurants and they were really delicious. I just need to try.

It’s Monday again…another week has gone and another new week is here. Last week just passed by too fast! I’m happy to have accomplished quite a number of things. Being busy at times is good but being busy all the time is not good. A constantly stretched rubber band will easily snap. Work, food and life need a balance in order that we can remain healthy and happy. I think I have kept mine reasonably balanced….*big smiles*

Beef Dumplings In Turkey Soup With Kimchi

Beef dumplings in turkey soup

Beef dumplings in turkey soup

It’s summer here but most days are still very windy, rainy and cold……*sigh*. Soup is still what I like most on those days. One of my favourite soups is turkey soup. Over here in UK, turkey drumsticks, like chicken drumsticks or thighs, are much cheaper than breast meat. I am so happy that’s the case because I only like the thighs and drumsticks. I always buy 2 turkey drumsticks, sometimes 4. I just bake all 4 together to save electricity. You can freeze some if you don’t use all. I cooked this beef dumplings in turkey soup served with kimchi for dinner yesterday.
