Well, I have indulged in too much chocolate lately. But life does need balance, an occasional dessert to add some sparks into an otherwise boring day. I still cook and eat healthy like freshly made juices, more fruits and vegetables. And lately my sudden craze over Thai Salad, starting with my Simple And Easy Thai Beef Salad. It is so good that I have been eating it almost everyday, with different combination but the same dressing.
I do bake almost everyday. It’s for breakfast, tea time or for parties. Most of the time I try to add fruits into my cakes to make it healthier. They also give a natural sweetness and flavour to the cakes. It’s also a way to make my family eat more fruits, too….*wink*.
I have just found that it’s so easy to make a cake using oil. I use olive oil. There’s no beating required. Just mix and bake. Isn’t it easy? It’s just super easy. Anyone can do that, even little kids.
And if you are lactose intolerant (cannot eat dairy products) or if you need something easy and quick or if you need a healthier dessert, this is one to go for.
I woke up a little late one morning and found there was nothing for my hubby and girls to bring for their morning break. There were 3 ripe nectarines left. Thought that would make a lovely dessert. Instead of the usual way of beating butter with sugar which is more time consuming with all the washing up again, I tried using olive oil (not virgin olive oil). The cake came out very delicious. My family liked it, much to my surprise…happy me of course. And happy there’s little washing to do, too.

I love nectarines, especially this time. They are so sweet and juicy. I only knew about nectarines when I came here. It’s so delicious biting into one…mmmm. It’s easy to eat 4 in one go.

Moist banana cake
In fact I tried the same recipe the next morning using bananas instead of nectarines. It came out very delicious, too. So, I suppose you can use any fruit.

Nutella banana cake
It was so good that I made another one the next day…..the same banana cake but with Nutella (hazelnut chocolate spread) swirled through. That was FABULOUS!! The combination of taste and flavour was simply heavenly to me.
Now I’m sure by now you can go wild with your own creation, adding nuts if you want or pouring sauce over or eating it with ice cream. The list is endless.
Here is my Super Easy No Dairy Nectarine Cake recipe:
Ingredients A
3 eggs
3/4C sugar
1/2C oil
Put all of Ingredients A into a mixing bowl. Beat lightly to mix well.
Ingredients B
1C flour
1t baking powder
1/2t baking soda
pinch of salt
Combine.
Ingredients C
3 nectarines (remove seeds and diced)

Add diced nectarines
Add beaten egg mixture of Ingredients B and diced nectarines into oil mixture of Ingredients A. Pour over the flour mixture and mix until combined.
Note : I didn’t even sieve the flour and baking powder. It still turned out very well.

Nectarine cake ready to be baked
Pour into a paper lined tin and bake at 180 degrees Celsius for about 30 minutes, depending on the depth of the baking tin. Test for doneness with a skewer. It’s cooked when the skewer inserted into the centre of the cake comes out dry. Do not over bake otherwise the cake will taste dry. This cake is best served while still warm thought it’s still delicious the next day.

Now if you are still not convinced, I made this cake with banana again yesterday. I only made it after dinner to share with a family of friends who joined us for dinner. My friends were amazed that it was so easy to make. We had hot banana cake in about 20 minutes, served with homemade raspberry ice cream. It was just so good. That’s fast, right? Hope you are convinced now.

wow Mary! quickest baking i’ve ever heard of. i don’t really bake, but you’re really starting to convince me. when it comes to baking, i only do easy and this definitely sounds easy enough. knowing me and my awesome baking skills though, i’d probably still manage to mess it up. haha. ok gotcha, not virgin olive oil. that’s actually quite an important factor. the cake looks really yummy. love nectarines. i’ve actually never heard of a nectarine cake before, but i love the idea. and i could eat Nutella by the spoonful, good stuff right there. ok, back to my usual stalking grounds ;). thanks for sharing this. will definitely have to bookmark this one! hope you have a great day and a lovely start to your week, Mary.

Aunty Mary…I miss eating Nectarine…During my stay that time probably not so sweet but still nice! No doubt i’m sure the cake is so yum yum.
