I just can’t wait to share this beautiful white chocolate cake, a perfect dessert for any time. It’s so simple and easy to make yet very delicious. This is the first time I made a white chocolate cake. It was so good I made again the next day.
You see, I had 2 lovely friends coming over for lunch and one of them cannot take chocolate, the brown type. I know what you are going to say……..”awwwww”. I know, I will be so miserable if I cannot eat all types of chocolates. But wait, at least she can eat white chocolate. I just have to make a dessert with white chocolate then, even though it’s not real chocolate. Never mind, it’s still spelled ‘CHOCOLATE’! And with the white chocolate sauce, it’s just heavenly…….delicious…..mmmm.
Actually I made this cake, a fairly big one, the night before my appointed lunch with my friends. But the next morning I had to go out for a while, about an hour, to do something. When I came back, to my utmost horror, almost the whole cake was gone…only a narrow strip left!!! I just couldn’t believe my eyes. I sat a while, wondering who was the culprit(s). Well, forget it, I quickly whipped up another one.
Really thankful that this lovely cake is so simple and easy to make…just melt and mix and then into the oven it goes. Then I make the white chocolate sauce. What a BIG rush! But what Big satisfaction….my friends liked it very much….*BIG SMILE*.
Here is my White Chocolate Cake With White Chocolate Sauce recipe:
300g white chocolate
Put all Ingredients A in a pot and melt under low fire. Keep stirring. Turn off fire and let cool for a while.
2t vanilla essence
Beat Ingredients B lightly. Add to the melted butter mixture. Mix well.
1 & 3/4 C flour
1t baking powder
Sieve Ingredients C into the egg mixture above. Mix well. Pour into a baking-paper-lined tin and bake in a preheated oven of 160 degrees Celsius for about 45 minutes or until a skewer inserted into the centre comes out clean. The time really depends on the depth of the tin that you use.
This time I use a deeper one. The other way is the smell. Once the nice smell comes through, it’s almost done.
Ingredients D (chocolate sauce)
1/2C double cream
150g white chocolate
Put Ingredients D in a small pot and melt under low fire. Keep stirring. Turn off heat. Let it cool till warm and beat with a hand beater until thick. Don’t you like the look of that gooey chocolate sauce? Awwww…..it tastes SO good! It is even great with fruits like strawberries or other fruits. I had lots of them! Oh yes, would be very good for pancakes, too.
This sauce in the picture here looks runny like condensed milk but if you leave this sauce in the fridge it will thicken much further. You can use it as a spread.
To serve, drizzle over the chocolate cake. For a nicer presentation, I cut out the cake using ring cutters. Then pour the sauce over and decorate with a sliced strawberry. That strawberry decoration above (top picture) was done by my friend. I love it…beautiful! Looks like a fan.
