We can still eat heathy even when life seems to spin out of control. There’s always a thousand and one things that need to be done, but too bad, we only have 24 hours a day. We need to learn how to relax and take care of our body.

I have been very busy lately but that doesn’t give me any excuse not to cook or eat healthy. All I need is to be more organised which is sadly not my gifting……*sigh*. But I did learn a few tricks along the way. Just keep 7 simple, easy, healthy dishes and keep repeating it every week until you hear complaints…….haha. If you are lucky, you can go on for at least a few months before someone starts to say, ‘Again!’ That tells you it’s time to change!

One of my greatest joy and satisfaction is to serve my family healthy food. One of the healthiest food is soup, whether thick or clear soup. It is easy and quick to cook, easy to eat, easy to digest, very healthy and very delicious. It can be a meal by itself for those who want to stay slim or lose weight.

This Carrot Butternut Squash Soup is one of my favourites that I cook often. I love to use carrots in soup as it gives a beautiful colour which is very pleasing to the eyes. It easily attracts children. With some homemade bread, you will be smiling away as you see your family tucks in happily. I served this soup to my family with my Healthy Spelt Flour Bread Loaf. Utter delight to see everyone enjoyed it to the last drop.

Besides soup, I use carrots a lot in juicing. My best is carrot-apple juice. It’s the best drink in the world. It has a natural sweetness that’s just so beautiful and refreshing. If you are interested in using carrot for juicing, you can read more at:

Well, here is my Healthy Carrot Butternut Squash Soup recipe:

Ingredients
3 big carrots
1/2 butternut squash (medium size)
water
4 slices of ginger
1 piece of chicken stock cube
2T olive oil
coriander to garnish

Put all in a pot

Put all in a pot

Peel the carrots and butternut squash. Cut it up into big chunks. Put them and ginger in a pot. Add enough water and bring it to a boil. Cook under medium fire until the carrots and butternut squash are very soft. It doesn’t take very long.

When it’s cooked, pick out the ginger and crumble the chicken stock cube into the pot. I used 4 slices of ginger so I must make sure I pick out the 4 slices of ginger. I won’t blend the ginger together because my family doesn’t like the ginger bits. We love the soup to be creamy and smooth with it’s natural sweetness. I didn’t add cream but 2 tablespoons of olive oil which is good for health.

Use a stick blend, the most useful here, and blend it well in the pot. If you like it more watery, just add hot water. If you don’t have a stick blender, it’s time to get one. It works like miracle in the kitchen and makes cooking a fun affair. I bought a Kenwood stick blender which is metal and it’s great because it works in hot soup, too. It’s also very useful for making smoothies.

Dish up into a bowl and garnish with chopped coriander. The coriander adds a lovely flavour to the soup. Enjoy it with some crusty bread….best with homemade bread.

Oh Mary this soup sounds really good. Bet I would love it! Reminds of a funny baby food story. My boys weren’t too fond of squash. I remember being sprayed with it a few times! Seems I always ended up finishing it…

Wow, that sounds delicious! I love butternut squash soup- I add some curry powder to it and it tastes so yum, never tried with carrots though..sounds like a perfect dinner in my opinion…

I love butternut squash soup, but to add carrots is such a great idea. Carrots definitely bring out such beautiful bright colour in the soup and must add a certain sweetness. Great combo, Mary. Our minds are weirdly linked lately. Last week it was bread, this week it’s butternut squash. I seriously just went out and bought a butternut squash today. So weird. I think next week before you post you should ask me what kinds of food I’m planning on making. Haha. By the way, LOVE carrot juice! Never tried it with apple though, must try.
