Peri-peri vegetable pancakes
This delicious Peri-peri Vegetable Pancakes came about because of my Peri-peri Chicken Goujons (Strips) - Better Than Nandos where I used the leftover batter to make pancakes. The chicken was really delicious, the pancakes tasted good but would have been better if they are a little softer. The best is to make the real pancake batter rather than using leftover from frying chicken.
I made these pancakes for breakfast. To make them healthier, I added vegetables and used spelt flour and fried with olive oil. My family liked it very much. I was in a rush so I did not manage to take more photos but I think making these pancakes is rather straight forward. This is a fabulous vegetarian pancake.
Here is my Peri-peri Vegetable Pancakes recipe:
Ingredients A
3T peri-peri sun-dried tomato and basil sauce
1T light soya sauce
2 eggs (beaten)
4T spelt flour
Mix everything in a mixing bowl.
Ingredients B
carrots
leeks
Wash the carrots and leeks. Cut carrots into short thin strips. Slice leeks finely. Add some fried onion oil in a frying pan and pan fry the vegetables until tender. Add to mixture of Ingredients A above.
Heat up a frying pan. Add some oil and scoop tablespoonfuls of the batter into the pan. When it’s lightly browned on one side, flip over and fry until its browned also. Dish up and serve hot with your favourite dipping sauce. I like it with the sweet chili sauce.
If you don’t have time, just pour a bit scoop into the frying pan to fill up the whole base. It’s quicker that way. Cut into wedges to serve.
This pancake is great for breakfast or a light vegetarian lunch.

Content Theft
I mentioned in my earlier post, ‘A Day Of Madness’, that someone stole my post. The author has not removed it despite my comment in the comment box. The author instead replied, “Salmon in the City Hall project provides a visual aid in this process.” The blog is Salmon Reviews.
Another site that apparently steals by changing the url. Just got this. If you click on my title, it goes back to their blog and not mine even though it is the title of my blog post. The site is My ShareAPic Public Picture. I find other blogger’s posts there, too.
I do hope someone will enlighten me on these 2 cases which I consider as content thefts. Appreciate your thoughts. By the way, some of you asked how I knew it. One of them went into my comment box and another caught by Google Alert.

Oh, gosh, this theft, and then not even apologizing or taking it off when you confront them! How brazen!! I don’t know what I would do, who would you report them to?? Your pancakes seem very healthy, I’ve never seen a recipe like that. Why don’t you try Googling “Blog theft” and see what you find? This makes me mad and now I am going off to bed very irked! Why don’t you try commenting again, this time with a stronger comment? Is their e-mail on their blog profile? E-mail them if you can find their address.

I feel like there seriously needs to be some kind of a blogging police out here to prevent posting/blog theft. I know that is a very naive thing to say, but it really makes me so angry, and I don’t get angry often. I hope my email helped a little, dear.
This is quite the pancakes you made. I’m not sure if I’ve had a pancake with leeks (did you know that’s actually my nickname LeeQs…teehee) and carrots in it, how interesting. Plus, these are spicy, I love spicy. It’s almost as though these pancakes are calling my name, “LeeQs LeeQs come eat us we contain leeks” haha. Ok a little twisted and lame, sorry. I must look for that sauce! I wonder if my Asian grocery store will have it. Thank you for sharing another wonderful and unique recipe.

Aw, it’d be a very delicious breakfast or lunch. Do you know that my hubby is a big fan of Nando’s peri-peri sauce. He bought a big bottle, then finished it very quickly. I think he’d like these pancakes as well.

You need to eat more leeks then, a very healthy vegetable. U can buy the peri-peri sauce from the normal supermarkets, not necessary Asian markets. Have fun cooking

hi mary, you’re a creative woman to come up with these pancakes, they sound delicious to me. as for those websites, cant do anything much? since your blog address in there, just take it as form of promoting your blog but at the end of the day, it’s very wrong for them to do this without getting consent from you!

Hi Mary….wow! What a breakfast! You the kind of lady if not married men love bring home show mummy…and a daughter in law every mothers dreams off…her son will be well fed, taken care of, ha ha.
I love this breakfast. 5 pieces will be fine with me. Love your presentation, display too. Can see you really take the time and dedication.

To his horror when he got married to find that I couldn’t even cook omelette the way he liked!! I didn’t know how to cook soup either, much to his disappointment as he needs soup every meal…that to my horror!! I thought that was totally crazy. Finally I trained him to drink plain water…haha. So…..it’s a LONG journey to be able to cook now. He is surely a happy man these days

I find it so frustrating that people can steal someone’s content and nothing seems to be done about it. I think if some of the servers who host these thieves had any integrity they would shut the sites down. Wishful thinking, I know! Your recipe is inspiring and definitely unique. I know I’m a little late to the party, but I just love peri-peri sauce and I have plenty of Nandos, but my favorite is African Rhino Peri Peri sauce. I think these look so good! Now I have to check out the peri peri chicken.

Kind of reminded me of Korean seafood-vegetable pancake though I know this just has all the veggies which make it even better for me!
