peri-peri vegetable pancakes

Peri-peri vegetable pancakes

This delicious Peri-peri Vegetable Pancakes came about because of my Peri-peri Chicken Goujons (Strips) - Better Than Nandos where I used the leftover batter to make pancakes. The chicken was really delicious, the pancakes tasted good but would have been better if they are a little softer. The best is to make the real pancake batter rather than using leftover from frying chicken.

I made these pancakes for breakfast. To make them healthier, I added vegetables and used spelt flour and fried with olive oil. My family liked it very much. I was in a rush so I did not manage to take more photos but I think making these pancakes is rather straight forward. This is a fabulous vegetarian pancake.

Here is my Peri-peri Vegetable Pancakes recipe:

Ingredients A
3T peri-peri sun-dried tomato and basil sauce
1T light soya sauce
2 eggs (beaten)
4T spelt flour

Mix everything in a mixing bowl.

Ingredients B

Wash the carrots and leeks. Cut carrots into short thin strips. Slice leeks finely. Add some fried onion oil in a frying pan and pan fry the vegetables until tender. Add to mixture of Ingredients A above.

Heat up a frying pan. Add some oil and scoop tablespoonfuls of the batter into the pan. When it’s lightly browned on one side, flip over and fry until its browned also. Dish up and serve hot with your favourite dipping sauce. I like it with the sweet chili sauce.

If you don’t have time, just pour a bit scoop into the frying pan to fill up the whole base. It’s quicker that way. Cut into wedges to serve.

This pancake is great for breakfast or a light vegetarian lunch.

Content Theft

I mentioned in my earlier post, ‘A Day Of Madness’, that someone stole my post. The author has not removed it despite my comment in the comment box. The author instead replied, “Salmon in the City Hall project provides a visual aid in this process.” The blog is Salmon Reviews.

Another site that apparently steals by changing the url. Just got this. If you click on my title, it goes back to their blog and not mine even though it is the title of my blog post. The site is My ShareAPic Public Picture. I find other blogger’s posts there, too.

I do hope someone will enlighten me on these 2 cases which I consider as content thefts. Appreciate your thoughts. By the way, some of you asked how I knew it. One of them went into my comment box and another caught by Google Alert.

Quote of the day……

Kind of reminded me of Korean seafood-vegetable pancake though I know this just has all the veggies which make it even better for me!

Ginny Hartzler  on March 7th, 2011

Oh, gosh, this theft, and then not even apologizing or taking it off when you confront them! How brazen!! I don’t know what I would do, who would you report them to?? Your pancakes seem very healthy, I’ve never seen a recipe like that. Why don’t you try Googling “Blog theft” and see what you find? This makes me mad and now I am going off to bed very irked! Why don’t you try commenting again, this time with a stronger comment? Is their e-mail on their blog profile? E-mail them if you can find their address.

Sounds really healthy and good. Love your creativity in making something so good that the whole family can enjoy! Thanks for sharing!

delicious and healthy snack!

LeQuan  on March 7th, 2011

I feel like there seriously needs to be some kind of a blogging police out here to prevent posting/blog theft. I know that is a very naive thing to say, but it really makes me so angry, and I don’t get angry often. I hope my email helped a little, dear.
This is quite the pancakes you made. I’m not sure if I’ve had a pancake with leeks (did you know that’s actually my nickname LeeQs…teehee) and carrots in it, how interesting. Plus, these are spicy, I love spicy. It’s almost as though these pancakes are calling my name, “LeeQs LeeQs come eat us we contain leeks” haha. Ok a little twisted and lame, sorry. I must look for that sauce! I wonder if my Asian grocery store will have it. Thank you for sharing another wonderful and unique recipe.

penny aka jeroxie  on March 7th, 2011

this theft issue has been around and it seems that so many of us cannot do anything about it. it is so frustrating!

Priya  on March 7th, 2011

Those pancakes looks damn irresistible..

peteformation  on March 7th, 2011

Wah, hot and spicy pancakes! Vegetarians can eat too!

Christine@Christine's Recipes  on March 7th, 2011

Aw, it’d be a very delicious breakfast or lunch. Do you know that my hubby is a big fan of Nando’s peri-peri sauce. He bought a big bottle, then finished it very quickly. I think he’d like these pancakes as well.

anncoo  on March 7th, 2011

@tigerfish - Thanks very much! :D

@Ginny Hartzler - Yes, I will have to report if the author refuses to take remove it. Email or commenting again won’t help. It would just waste my time and make me more angry probably. Glad you like the pancakes. Give a try when you are free. Have fun cooking :D

@kitchen flavours - Thanks very much! :D

@j3ss kitch3n - Thanks very much, Jess! :D

Shirley  on March 9th, 2011

This sounds great, though I have no clue what Peri-peri is.

lena  on March 9th, 2011

hi mary, you’re a creative woman to come up with these pancakes, they sound delicious to me. as for those websites, cant do anything much? since your blog address in there, just take it as form of promoting your blog but at the end of the day, it’s very wrong for them to do this without getting consent from you!

uncle Lee  on March 9th, 2011

Hi Mary….wow! What a breakfast! You the kind of lady if not married men love bring home show mummy…and a daughter in law every mothers dreams off…her son will be well fed, taken care of, ha ha.

I love this breakfast. 5 pieces will be fine with me. Love your presentation, display too. Can see you really take the time and dedication.

I guess you use that very special ingredient called ‘love’….
and thats what make the breakfast real special.
Best regards, keep a song in your heart.

redkathy  on March 9th, 2011

Hi Mary, beautiful breakfast! I am clueless on how these site get away with stealing! I found some of my stuff there too. Hopefully we will gain some link juice from these thieves!!!

Mary  on March 10th, 2011

@pigpigscorner - Ya, it’s frustrating :(

@Namitha - Yes, I read about how to handle that. Will do it. Sad and frustrating :( Thanks very much for advice.

@sweetlife - Thanks very much for your support and compliments :D

@Juliana - Thanks very much, Juliana! :D

@5 Star Foodie - Thanks very much, Natasha! :D

@Angie’s Recipes - Thanks very much, Angie! :D

@deeba - Thanks very much, Deeba! :D

@crustabakes - Thanks very much! :D

@Lindsay - Yes, the theft is just a pain in the neck! :(

@noobcook - Yes, I will do something about the theft. Thanks very much for your support :D

@Anna Johnston - Yes, really awesome. Glad you like the pancakes though :D

@Light Delight with TouTou - I love Nandos too. But it’s cheaper to eat at home and the peri-peri sauce just works wonders :D

@Shirley - Peri-peri is a sauce…great as marinade or dip. There are different flavours. Give a try if you can find it. have fun cooking :D

@lena - Well, I hope it’s promoting my blog but in this case, I don’t think it is. It’s drawing traffic away from my blog. They use our posts to earn money….selfish! Thanks very much for your compliments for my pancakes :D

@uncle Lee - Haha….your compliment made me laugh! That was just not the case when my boyfriend (now hubby) brought me home to show his mom. To his horror when he got married to find that I couldn’t even cook omelette the way he liked!! I didn’t know how to cook soup either, much to his disappointment as he needs soup every meal…that to my horror!! I thought that was totally crazy. Finally I trained him to drink plain water…haha. So…’s a LONG journey to be able to cook now. He is surely a happy man these days :D Food means everything to him. I give up trying to understand that…just cook….haha. Are you sure 5 is enough? My hubby must have eaten 10. They look big but actually quite small. You may regret for having only 5…haha

@redkathy - Oh no, your stuff were also stolen? The way, he puts the link, I think will only draw away traffic from you if I am not wrong. It’s just sad :(

Bridgett  on March 10th, 2011

I find it so frustrating that people can steal someone’s content and nothing seems to be done about it. I think if some of the servers who host these thieves had any integrity they would shut the sites down. Wishful thinking, I know! Your recipe is inspiring and definitely unique. I would love to try these lovely pancakes.

tasteofbeirut  on March 10th, 2011

I love savory pancakes filled with veggies; I am actually getting ready to make some with cauliflower!

RamblingTart  on March 10th, 2011

That is absolutely rotten of them, Mary! I just got a notification, thanks to Google Alerts, that someone just started a blog called TheRamblingTart. It doesn’t seem right that folks should be able to do that. Sigh. On the bright side, your pancakes sound splendid. :-)

Lyndsey  on March 17th, 2011

I know I’m a little late to the party, but I just love peri-peri sauce and I have plenty of Nandos, but my favorite is African Rhino Peri Peri sauce. I think these look so good! Now I have to check out the peri peri chicken.

kristy  on March 28th, 2011

Mary, I have yet check the thief site! Will do later. But before that I have to steal a few of peri-peri fritters from here. haha…
