We can still eat heathy even when life seems to spin out of control. There’s always a thousand and one things that need to be done, but too bad, we only have 24 hours a day. We need to learn how to relax and take care of our body.

I have been very busy lately but that doesn’t give me any excuse not to cook or eat healthy. All I need is to be more organised which is sadly not my gifting……*sigh*. But I did learn a few tricks along the way. Just keep 7 simple, easy, healthy dishes and keep repeating it every week until you hear complaints…….haha. If you are lucky, you can go on for at least a few months before someone starts to say, ‘Again!’ That tells you it’s time to change!

My husband one day came back and told me that we would be going to the British Museum in London that weekend. He said his friend, Edwin, is taking us there. Sounds great. A great relief he didn’t say, “We are going now!” I would have banged his head with the frying pan….haha. He did that not too long ago when he called back to say that we are going to watch ‘The King’s Speech’, giving me little time to get ready. You can read more on that in ‘A Day Of Madness’.

I’m sure all parents know that children these days have awesome power. They know how to woo themselves into their moms’ and dads’ hearts while other times twist their arms. When it comes to food, especially healthy food, my children know they will always win. In order to earn other favours from me, they are always very smart to ask for healthy food prior to that….instant win….how smart! But of course I apply my dagger-like stare when it’s unreasonable favour. Even the cats will pretend to go to sleep…haha.

I had been busy helping my eldest with her personal project and sorting things put, cleaning and also getting people to do some work in my kitchen, on top of a million and one other thing to do. I have disappeared from the blogosphere for quite a few days. I had a few things to do and thought it’s best to stay focused. Very sorry for not visiting any blogs. Will catch up soon.

The horror of the Japan earthquake last Friday threw my life off balance completely. Life is really fragile. It’s time to remind ourselves not to take each other for granted. While thinking about it, I made this Chocolate Rum Brownies With Sultanas to share with friends. They liked it very much. I love the rum smell and the addition of the sultanas.

This delicious Peri-peri Vegetable Pancakes came about because of my Peri-peri Chicken Goujons (Strips) - Better Than Nandos where I used the leftover batter to make pancakes. The chicken was really delicious, the pancakes tasted good but would have been better if they are a little softer. The best is to make the real pancake batter rather than using leftover from frying chicken.

I love to add fruits when making cakes, of course with the exception of chocolate cakes. Blueberries are my favourite and so are bananas. They are very healthy fruits. Time to combine them and see what happens. To make it even healthier I used spelt flour.

I get up early every morning. I love the early hours when I can do my stuff without being disturbed. So, this cake was made at 5am, just perfect for breakfast when the rest get up.
