Fried rice is such a comfort food. I’m sure everyone likes it. It’s really a meal on a plate. I was very surprised when I came to Scotland and found that restaurants even sell egg fried rice…only with eggs! That shows how popular fried rice is in this part of the world. To me, I don’t think it’s any worth the money paid. Cooked at home, you enjoy all the good quality ingredients, eat your heart’s out and save a lot of money. I think my plate of fried rice will have to cost at least £15 here with so many king prawns, herbs and other good quality ingredients used. I have eaten a very simple country fried rice that cost about £8.20! There were very few ingredients in it. Home cooked food is still the best!

Nando’s is a chicken restaurant as it only sells chicken. It’s also a fast food chain. My children love to eat at Nando’s. To me it’s nothing much special. The chicken is grilled. It’s the sauce that makes it special. If you love Nando’s, you will love this simple and easy chicken goujons cooked with Nando’s peri-peri sauce. By the way, I had just learned this new word ‘goujons’ recently when I saw a packet of frozen chicken meat in the supermarket. I’m sure you can call it chicken strips or even chicken sticks. It’s very quick to cook. It’s a real homemade fast food.

I seldom cook a western dish. It always looks too intimidating to me. The thought of using dairy like butter, cream or milk in cooking just freaks me out. I only feel very comfortable doing stir fries, pan fries, boiling, baking or braising. I love simple, easy and quick cooking. I’m not too keen on recipes that come with a long list of ingredients. But I thought 2011 is a good year to venture out, get out of my comfort zone and learn more. This low fat fish pie is just one of them. It looks difficult but actually after trying it out one time, the second time was very easy after simplifying the ingredients and being more organised.

It’s good to eat healthy food everyday but we do need some desserts occasionally to fill in those boring gaps in life and make us smile. I thought of chewy cookies yesterday…….big chewy chocolate chips cookies would be perfect for this freezing weather.

I had made Double Chocolate Cookies. They were really good but not chewy. I would love the chewy ones and I also want to try with white chocolate. I took a simple chocolate chip cookie recipe from my old notebook which I have never tried before and tried to substitute the milk chocolate with white chocolate. I cut down the sugar by a lot and then added in chopped milk chocolate. The result? It failed very badly but after adding more flour, it turned out to be the best ever chewy chocolate chip cookies.
