I’m back!! I was away from a land of free air condition (Scotland) to a land of free sauna (Malaysia). Now I have jet leg to cope, as usual….sigh. I should be sleeping but here I am typing away! I went back to see my parents. They are doing fine now. Will share more in the coming posts. Thanks very much for dropping by while I was away. Here is another of my favourite recipe to share with you…….Purple Majesty Potato Fries. Have fun cooking and baking!
I love good fries. When I have time I love to sit in McDonalds to enjoy a cup of latte and some fries while reading papers or books. Yet I have never cooked fries at home. But when I discovered Purple Majesty Potatoes recently I was just too eager to try it. It turned out very delicious.
Instead of deep frying it, I shallowed fried it so as not to waste oil. Here is my Purple Majesty Potato Fries recipe:
Ingredients
purple majesty potatoes
corn flour
sea salt
coriander
oil
Wash the potatoes well. Cut the potato into strips with the skin on.
Sprinkle some corn flour over it and mix well. This gives it a nice outer crisp.
Heat up some oil in a frying pan or wok. Pour in the potato strips and pan fry them. Cover. Every now and then, stir and turn them so that every side is fried. Add some crushed sea salt and a few tablespoons of water and cover to steam cook it. When the water dries up (just 1-2 minutes), dish up and sprinkle with chopped coriander and serve. You can enjoy it just as it is or you can serve it with roast. It’s very delicious. I like it very much.

You were back in Malaysia? When? Where? Not in Sibu, I hope… Didn’t let me know. We could have met up and gone fro some nice mam-mams…. I’ve seen these purple potatoes on tv - not too keen on the colour. At first, I thought they were yam!

These purple potatoes are great. I have onl encountered it once over here in the US but I don’t think it is Purple Majesty Potatoes. You fries look very tasty.

glad to see that you made it back safely. hope you had a great time in Malaysia. Visiting parents is always exciting. i’m sure you have lots to share with us.
i’ve yet to try majesty potatoes. when i find them here i will give them a try for sure. i like that you shallow fried them so not to waste oil. your recipe sounds simple and delicious. i’m a big fan of fries, but have never tried frying my own.

I love fries too - frying them is another matter. I have got where I do not like to fry too much these days, not for the reason it should be but because of the clean up!!! So glad you are back and had a good trip, glad your family is well and can’t wait to hear of your adventures…. (did you cook any Mexican while back home….hehehe)

I think your purple potato sounds delicious.
