Ribbon Carrot Stir Fry
Carrots is one of my top favourite vegetables. It’s such a delicious and healthy vegetable. I eat it very often, either in freshly made carrot juice with apples or in stir fry and soups.
Carrots are sweet and high in vitamins and minerals and they make great juices. My best is still carrot and apple juice. Carrot juice is widely used in natural healing for diseases like cancer. Ribbon Carrot Stir Fry is a new dish that I tried recently. I love the look and the taste. I actually had fun peeling them into ribbons. Cooking it was simple and easy. Carrots have a lovely natural sweetness of its own so simple seasoning like a little sea salt is good enough.
Here is my Ribbon Carrots Stir Fry recipe….simple, colourful, healthy and delicious.
Ingredients
carrots (peeled)
coriander
fried garlic oil
butter
sea salt
Wash the carrot clean. Use a peeler, peel the carrot along its length into ribbons. Be careful not to peel your fingers. I almost did that.
Heat up some fried garlic oil in a frying pan or wok. Add the carrots and a little water to it. Cover and cook for a couple of minutes, depending on how soft you want the carrots to be. I love it with still some crunch to it. Add a tablespoon of butter, some sea salt and chopped coriander to it and mix well. Dish up and serve hot. It’s so delicious I can even eat a big plate on its own.

This is such a good idea! I love carrots, but I’ve never thought of just cooking carrots like this! I’ll have to try this one some day…..

Oh Mary, I absolutely LOVE this dish! You are a genius! This is definitely a fun, healthy, creative, and enticing dish. If I had a fork right now I’d want to dig into the dish I’m viewing on my phone right now. Such a fun dish for my kiddies too. I’m sure smiling big right now :-D. I really should cook with carrots more, but I’m ashamed to say I don’t. I love carrots anything, especially a nice tall refreshing sweet glass of carrot juice, but I have to admit I dislike carrot cake. I don’t know why though. Need more creative juices to flow first…haha. Oh, wonder why you don’t like carrot cake. Is it because of the cinnamon smell? I love carrot cake if there’s no cinnamon. With orange cream cheese frosting, it’s really the best. I can even eat that for lunch
