The weather here in Northern Scotland is getting cold fast. It has been very windy, grey and cold. I think it takes effort to keep smiling. Nothing is better than hot soup. My family loves hot soup and they love noodles, too. That makes cooking a simple, comforting and warming meal easy, especially if I am busy or lazy…..just noodle soup with all it’s topping. It’s quick, nutritious and delicious.

The other day I cooked a low fat seafood and tofu noodle soup for 2 persons….instant smiles of course. There’s very little oil as you can see in the picture. The wee little bit of oil is from the chicken bones that I used to make the soup.

I’m excited to share this post about Scotland. It is a very beautiful country. I love every bit about Scotland except for its very cold weather weather, especially here in Aberdeen, North East of Scotland. It faces the North Sea which is famous for its oil. It’s often very windy and cold. I remember at one time I was out shopping with my daughter. We had quite a few blocks to walk. The wind was so strong that we had to hold each other….so afraid we would be blown away. Got to put on more weight may be…haha

I’m really glad that I started blogging 1+ years ago, started last June. I would have started way earlier if I knew it would be so much fun. Not only did I learn a lot of new recipes (most of the recipes on my blog are new), saving all my recipes in one place for easy reference but blogging has opened up to a whole new world of like-minded people who love to cook and eat! I love coffee. Coffee makes my world go round. My favourite is the roasted coffee. I am not very particular about the brand. It just needs to have a very good, captivating aroma. I love to try different brands. I love Arabica and just bought a packet of organic one. It smells really good. I don’t drink a lot but every now and then I would run and make one. It helps me to relax and feel good! I have been very busy this past week and coffee helps to calm my nerves and keeps me smiling. Oh, here’s what I believe……’When the going gets tough, the tough drinks coffee and keeps smiling’….haha

I love meat cooked in Korean hot bean paste or Japanese miso paste. It gives a very lovely flavour to meat dishes. I remember a vegetarian friend of mine cooks miso soup everyday. It’s very delicious. I had a pack of belly pork in my fridge that needs to be used up.

I know many would avoid belly pork because of it’s high fat and quickly relate it to high cholesterol. But if we eat meat in moderation, eat a lot of vegetables and fruits, exercise a lot, cut down on stress and smile more, we will have less to worry about cholesterol and other sicknesses. Try to eat food as close to nature (meaning in it’s original form) as possible for better health. For example, choose fresh meat to canned, processed meat, butter to margarine, fresh fruits to canned fruits, pure sea salt to table salt, olive oil to vegetable oil, pure cane sugar or honey to artificial sweetener……and the list goes on. If you really need to, don’t eat it too often.

Mexican food is very delicious and I have been having much fun making and eating them after falling in love with it recently. So far I have learned the chicken fajitas and chicken quesadillas. I have also made my own tortillas which taste much better than those bought from the shop. However on a couple of occasions I used bought ones purely out of convenience and to taste the difference.

Mexican food is my new found love! It is a new hit in my family. It was my daughter who sparked it off when she cooked chicken fajita for us using a fajita kit. Check it out at Mexican Fajita By Daughter. Since then, I have cooked a few times to invite friends for chicken fajita lunch. There are many other Mexican dishes that I want to learn. I have here learned my second Mexican dish…chicken quesadilla. It is very delicious with all the melted cheese inside together with the beautiful flavour of Mexican seasoning and hot salsa.

I had much fun making these Chocolate Crinkle Brownie Cookies. When I saw it on Angie’s blog, Angie’s Recipes, I told myself I would make these one day. But then the thought refused go away. This one is just too tempting. The recipe looks like a brownie recipe. I love brownies and brownies in a cookie with all the beautiful crinkly look is just too much for me to resist! This would make a perfect dessert for any time.
