Healthy Sweet Potato Carrot Soup
My family loves thick vegetable soup. It is very easy to cook and very healthy. As I love sweet potatoes, one of my top favourite vegetable soups is sweet potato and carrot soup. It has a lovely natural sweetness of its own and goes great with some crusty bread. This time when I cooked this soup, I made fried garlic tortilla pieces to go with it. It is very delicious. I’ll share that in another post.
The hand stick blender that I bought recently is not only very easy for making smoothies but also very easy for making this type of thick soup. If you like smoothies, click How To Make A Delicious Low Fat Healthy Smoothie.
My first soup with the stick blender was this healthy sweet potato carrot soup. I added apple for additional sweetness. It was really delicious. My family likes it very much. This soup is very healthy, full of nutrients and high in fibre. This is an awesome way to make picky kids eat vegetables. There’s no vegetable pieces to pick out! And for those who have poor bowel movement, this soup is also good for them.
Here is my simple and easy Healthy Sweet Potato Carrot Soup recipe. The amount is good for 2 persons for a meal.
Ingredients
1 big carrot
1 medium sweet potato
1 red apple
1 small knob of ginger (wash and pound)
chicken stock granules to taste
fried garlic oil
double cream to decorate
You can use different quantity of the vegetables and apples. I used red apples. If you don’t like it so sweet, you can use green apples.
Cut everything into smaller pieces and put into a pot. Pound a piece of ginger and add to it.
Add some water and put to boil. I used a little too much water. So when you blend it, don’t use all the water. You don’t need a lot. When all the vegetables are cooked, scoop out the soup and leave some in the pot. Discard the ginger. Use the stick blender to blend it until smooth, right in the pot itself. If it’s too thick, add some of the clear vegetable soup to it. Season with sea salt to taste. I added some fried garlic oil to it. This soup is very delicious with a lovely mild ginger smell. Serve hot with some cream swirled through for decoration.

Yum, Mary, this soup is healthy. If that’s not a bowl full of carotenoids, I don’t know what is. Ooh, and I also like the way you didn’t add extra sugar to the soup. Mary, I made the soup yesterday and because I didn’t have any garlic oil, I began by frying a little garlic. Somehow a small red chilli crept in there, too. It seemed like a good idea at the time. LOL Once I’d blitzed the soup, I pushed it through a colander, to smooth it a little bit more. My son’s review of the soup was “A sweet soup to die for! It was mushy - but in a good way - and the chilli makes it soupy buenos!” he’s 11yrs old.
I think he liked it! I know I did!
