Moist orange cake

It’s time for desserts to sweeten up life. Like lemon cakes, moist orange cakes are one of my top favourite cakes. I love the tangy and citrusy flavour and its moist texture. I remember eating lots of orange cake during Chinese New Year when I was young. My aunty always made them, only during Chinese New Year. There was no electrical gadgets then and my poor uncle was always the victim. Being the only man in the house and considered strong, he had to do all the beating and creaming by hand! I’m so thankful I live in a more modern age now otherwise we will have very few cakes to eat….only those melt-and-mix types.

This is the first orange cake that I have tried and really pleased with the result. It has lovely orange flavour and is very moist. I did not pour orange syrup over it or make any orange icing to top it. It is very delicious just as it is. I only used 2 big, sweet oranges for this recipe. I am sure with the orange syrup or orange frosting, you will take this moist orange cake to a completely new level. Would be beautiful with some ice cream, too.



Here’s my Moist Orange Cake recipe:

250g butter
1C sugar
4 eggs
1 & 3/4C self-raising flour
1/2C milk
1/4C orange juice
zest of 2 oranges

Add orange zest to butter mixture

Beat butter and sugar until light and creamy. Add in eggs one at a time and continue to beat until the eggs are incorporated into the butter mixture. Add the orange zest and mix well.

Combine the orange juice and milk and add to the mixture. Mix well. Then fold in the flour into the batter above and mix gently.

Pour the batter into a paper lined cake tin and bake for about 30 minutes at 180 degrees Celsius or when a skewer inserted into the centre comes out clean. The time depends on the thickness of the batter. A shallow, bigger tin would be quicker to bake. A deeper, smaller pan would take longer. I always judge by the smell. Once my kitchen is filled with a nice smell of baking, I know my cake is almost done. To test for doneness, insert a skewer into the centre of the cake. If it comes out dry, it’s cooked.

To be honest, I’m not a huge fan of orange anything except the fruit itself, but boy oh boy does your cake look awesome. I sooo would like to give that a try. It looks so moist, and perfectly baked. I would love to see you on your own food show!

@claire - I don’t have much idea about conversion of measurements. I only know 1C of water is 250g. Flour and sugar would be different. I find using cups very easy and quick. I always use approximation and never follow to the exact gramme. A little difference won’t really show in the result. A friend of mine use a weighing scale to the tenth of a gramme! That would be too suffering for me….haha :D. You can easily get a whole set of these measuring cups in baking shops. They are cheap.

It looks super moist! Certainly not in need of any syrup. I like both orange and lemon desserts, but definitely orange if I’m going to add chocolate to the mix. Well done for being strong with the orange addition, no point faffing around with the flavour! Go for broke! :)
