Spicy Aromatic Baked Chicken
I must say I have been very contented with my Super Fast Chinese Roasted Chicken and Teriyaki Chicken that I didn’t really quite bother to try something new. They are my 2 top favourite baked chicken. They are quick to prepare, quick to cook, quick to serve and taste very delicious. On top of that, they are very versatile and can be used in many dishes.
However, I’ve just realised that both are not spicy at all. I need one baked chicken that’s spicy. So, last week I tried to make a marinade with Korean hot chili bean paste. Wow….I must say it is really delicious. My family liked it very much. The hot chili bean paste gave the marinade the extra punch. I have used this spicy aromatic baked chicken to top noodle soup and also for fried noodles and of course to go with rice, too. I have just marinated some more last night and will be baking it again today. That explains further that it is very easy to cook and very delicious to eat. I love the bright, spicy colour, too.
Here is my Spicy Aromatic Chicken Bake recipe.
Ingredients A
4 chicken legs (deboned)
Ingredients B (marinade)
1T hoisin sauce
2T Korean hot chili bean paste (less if you want it less spicy)
3T sugar
2T light soya sauce
2T sweet chili sauce
Mix Ingredients B together in a bowl.
Put the deboned chicken pieces into a mixing bowl. Pour the marinade over the chicken and mix well. Let it marinate for a few hours, best overnight. Lay them on a baking tray and bake at 200 degrees Celsius for about 20-25 minutes.
Let cool, cut and serve. It tastes so good just baked though it tastes just as good the next day. Only that you need to warm it up. This recipe is great for BBQ too.

@Sidney - Thanks very much, Sidney! Your dad’s roast chicken and roast ducks always make me drool
@noobcook - I have not tried baking with a whole chicken. Mainly it’s because no one wants to eat the breast meat. Like you said, it’s faster using chicken thighs, especially deboned ones.
