Chicken Stir Fry with Coriander, Ginger And Onion
This chicken dish is my new favourite which I cooked for dinner yesterday. My children love ginger and coriander, also known as cilantro. They always ask me to add more….weird huh. I always wonder where did they get that huge liking from. I remember when I was young, I hated ginger and coriander but now I like it very much, too. Now I think I’m weird too….haha. Must have been influenced by my children. Well, coriander, ginger and onions have lots of health benefits so it’s good to like them.
I thought I would just make this chicken dish really simple with ginger, coriander and red onions and hope it turned out delicious. There was no elaborate seasoning except for the sea salt to marinate the chicken. The flavour has to come from the ginger, coriander and onions. I stir fried this dish under quite high heat so that the dish is fragrant and dry. I’m really so happy it turned out very delicious. We even enjoyed eating the ginger strips. The red onions were very tasty to as they taste sweet.
This recipe is really simple and it is easy and quick to cook.
Ingredients A
400g chicken breast meat (sliced)
3/4t sea salt (best salt to use)
1T fried garlic oil
1T corn flour
Mix everything together and let it marinade for about 30 minutes, best if longer.
Ingredients B
1 bunch coriander
2 red onion
1 knob ginger
Wash the coriander well. It’s one herb that often has a lot of sand. Chop it roughly.
Peel the onion and cut lengthwise. Wash and cut the ginger into thin strips.
Heat up some oil in a frying pan or wok. Add the ginger strips. Keep frying until golden. Then add the onions and continue to fry for a while. If you like it soft just fry longer. Add the chicken and keep frying until it’s cooked.
Lastly add the coriander and mix well. Turn off the heat. Adjust the seasoning according to your taste. Dish up and serve hot. I did not add any more salt as there’s enough salt aded to the chicken. It’s very delicious with rice. I’m sure it’s just as good with noodles or for wraps.

Mmm, that does sound delicious, and very fragrant! My eldest daughter loves coriander, and other green herbs, basil, parsley etc…and vegetables like brussels sprouts! Very strange kid. But my youngest daughter will refuse to eat anything that has green stuff in it ![]()

That is quite a lot of ginger added which makes it so good! Some people actually don’t like cilantro because of the pungent (they say cockroach) smell but how can it be? I love cilantro too ![]()

The coriander seems to be a love-or-hate ingredient. I love it to death but I can’t use it too often, as my daughter doesn’t like it at all. Once I hid it in the Thai fish cakes, she ate a lot. Heehee…
