I’ll take a brief break from my holiday posts to share a very simple, easy and quick recipe with you. After a wonderful time away in Hong Kong and Malaysia, I have to admit getting back to normal, practical life here is quite a struggle. I don’t feel like cooking since I came back. I must have been too pampered by my family members and friends with all the good food and fun around. The jet lag is not helping me either. I was hungry, sleepy and awake all at the wrong time! Past couple of days, I had to resort to more coffee to help. Finally….finally….it worked!

I was really desperate for the simplest and quickest food to cook. It was like heaven on earth when I came across this Filipino Chicken Barbeque by SKIP TO MALOU. Looking through and seeing how interesting and easy it was, I jumped at it. It was one of the easiest recipes that I have cooked.

This dish quite like my Quick Sour Plum Sauce Chicken …….very simple, easy and quick. A friend told me she must have cooked it 9 - 10 times as her son likes it very much and always asks for it! That’s so lovely to know.

MALOU is a very friendly  food blogger. She has a lot of lovely recipes and interesting stories on her blog. She’s very down to earth and I love her blog. She’s a Filipino staying in The States, so you get the best of both worlds.



I made some small adjustments to the recipe. I found 2 small tins of Pepsi so I thought that would be a good substitute for 7-up. Mine would be Pepsi Chicken! When my daughter saw me added the Pepsi to the chicken, she went ‘Eeeeeeeewwww’. But when it was cooked, she said, ‘It’s actually really nice’!! I always told her not to comment until she tastes my food. She always says, ‘Yes mom’ but she still does it!

Well, if you have no time or just no mood to cook but still need to feed the family or yourself, this is one you must try. It’s very delicious even the next day, probably tastes even better. I know this recipe is meant for BBQ but it’s just as good cooked in a pot. It was so easy that I taught my husband yesterday. Now I wonder when he will cook this for me. Hope must always be alive, right?….big smile

4 chicken legs
2 small cans Pepsi (300 ml)
3/4C tomato ketchup
1/2C light soya sauce
1/2C brown sugar
1 knob of ginger (sliced)
1 whole garlic (minced)
1t pepper powder

Mix all in a pot and let it marinade for at least an hour. Then cook it on medium heat for about 40 minutes. Cook it longer if you like the chicken softer.

Serve hot with rice. It’s very delicious. This would be very good for BBQ too as was mentioned in SKIP TO MALOU’s recipe.

@lululu - I haven’t tried Cola chicken so I can’t tell. But I think it should be similar as Pepsi is quite a cousin of Coke…my guess :P Would be good to give a try.

I’ve not heard of this Filipino recipe, but I know of chicken barbecue marinated in 7-up and lemongrass and seasoned with soy and pepper. It’s pretty good too!

I know exactly how you feel. It’s hard to get back to real life after a holiday. It’s like you want to be on “holiday mode” forever, but when I’m on a holiday, I want to get back to normal life! such is life.

Looks delicious! I made something like this once, only with coca cola instead of pepsi- it tasted like teriyaki chicken…..

Quick recipes are awesome for after holidays- Whenever we get back from holidays, we can’t be bothered cooking but we’re tired of eating out =]

How interesting Mary. I’ve heard of Coke being used as a marinade for BBQ before, but never seen a Pepsi sauced chicken before :) When I don’t feel like cooking I always serve breakfast as dinner (scrambled eggs, bacon, toast, tomatoes). Easy!

the other day my friend cooked it with coco cola.. 1.5 liters.. not bad too..but of course yours have more ingredients so i think the taste will be different.

This sounds like quite the interesting recipe. Have you heard of beer can chicken? I think you drink about 1/4 of the beer and then stuff the whole can in the chicken, stand the chicken and beer on the BBQ and BBQ away. I’ve never tried but I assume it must’ve been invented by a man. Teehee.
I’ll have to try this pepsi recipe as I have a love for pop. Thank you for sharing Mary. Glad the coffee finally, finally worked.

I do this less frequent now because of the soft drink. But it was once one of my favorite simple dishes, be it coke with chicken wings or pork ribs.

This looks really good except for one thing - I have made Dr Pepper roast, Coke ribs, beer can chicken, etc. but never anything with Pepsi… we just don’t do that in our household…(Coke stockholders) … would have to substitute….

Ooh..Mary! You’re creative and the chicken looks so delicious! I remember there are recipes using coke in pork ribs and it is to be deep fried….must dig out my newspaper cutting.. ;DD

YUMMY! My sister marinated a whole chicken with cola overnight and cooked it on a grill the next day. only bones were left mmmmm. I forget about the simpleness of this dish. thank you Mary!

@claire - Wow….1.5 litres!! That’s a lot of coke used. My Korean friends soak pork ribs in coke, drain and then cook it. Apparently coke will tenderise the meat. I have to try that too :D

@TasteHongKong - My family doesn’t really drink soft drink. That’s why I have a few tiny cans of Pepsi which had been lying there for quite sometime. Don’t even know where they came from. They surely came very handy. This is a good dish for parties…so easy and simple to cook :D

I was smiling the whole time (apt for your blog title keep smiling huh?) because you surprised me with this blog feature… such a wonderful surprise Mary, I am tickled pink.
Mine was 7-up and yours was Pepsi.. well they come from the same Soda Bottling Company hahahah.

Yeah you could also cook it in the pot just like what I did in my first post. This is always my default recipe when I want something fast or when I’m not really in the mood to cook something yet you have your family to feed… hahaha.

I’ve seen this dish before (think it was Ann of Pig Pig’s Corner). I honestly have not tried it as yet but must be good. The caramel in the drink will certainly sweeten the dish .. got to give this a try one day plus the coke cake as well.

hey mary! i was looking for chicken recipes to cook for my family and i came across this. i’m really new to this cooking thing, i’m 19 years old only. my dad went to UK for a month, so i’m left in charge of cooking. the thing is, i don’t do so well with the whole measurement thing, so i was wondering, what would be the amount of ingredients if i want to cook one whole chicken (already cut into small pieces)? thanks in advance! =)

@angelste93 - Thanks very much for dropping by. It’s really wonderful to know you are cooking at a young age. My daughter hardly cooked when she was 19. I guess mommy is always there and that’s why :D If your chicken is small, you can easily double the ingredients. You can even triple it. Any left per sauce can be kept in the fridge or freezer and be used again. Hope this helps. have fun cooking :D
