Walnut Caramel Slice
Walnuts are very good for health. It has many health benefits and contains more omega-3 than any other nuts. So when I saw this recipe in one of my Australian Women’s Weekly cookbooks, I was so excited to try it out. It turned out very successful. I find it very delicious with a cup of tea. This makes a lovely dessert for any time. I made it to share with my friends. They liked it very much.
The recipe is very simple. I made some slight adjustment.
Ingredients A
250g butter
3/4C sugar
1 egg
Put butter and sugar into a mixing bowl and beat until light. Add the egg and continue to beat.
Ingredients B
2C plain flour
1/2C self-raising flour
4T custard flour
1/2t salt
Sieve Ingredients B and add to the butter mixture above. Spread it out onto a lamington (shallow) tin lined with baking paper and bake in a preheated oven at 180 degrees Celsius for about 15 minutes.
Ingredients C (topping)
1C brown sugar
2T golden syrup
180g butter
300g walnuts (roughly chopped)
While waiting for the base to be baked, put sugar, syrup and butter in a pot and melt under low fire. Lastly add the walnuts.
When the based is done after 15 minutes, remove from the oven and pour the walnut mixture on top. Spread it out and bake a further 5 minutes. Remove, cool and cut into slices and serve. Mmmm….they are delicious.

Love walnuts - love caramel - must give this a go! I am assuming that custard flour is the same as UK custard powder (ie vanilla flavoured cornflour).
My favourite slice has to be one my mum makes: a layer of currants in a sandwich of pastry with crunchy sugar on top - a bit like a slice of Eccles Cake. Yum! (Must get her recipe and post it.)
