Yeah……it’s my blog’s 1st Birthday today!! How happy I am to know I have blogged for one year! I have learned many things, cooked many new dishes, blogged consistently and smiled through the whole year. It’s unbelievable and it’s an amazing journey. I have made many wonderful friends too. Keep Learning Keep Smiling does live up to its name….yippee!
I told myself that I want to take a new challenge to learn and make something new and something that’s also my favourite for my blog birthday. After much thought, I decided to go for ice cream. I love condensed milk, I love mango and I love ice cream. This sounds just perfect for my First Blog Birthday…..mmmmm. It is also a challenge to me. Well, summer is coming and I know my family would simply love it.
Making Ice Cream Is Really Easy
Surprise….surprise…..making ice cream is really not that difficult. I tried it the other day. It was super easy, super creamy and super delicious…mmmm!! The best is……I made it without an ice cream maker….yeah! I found out by accident. While making the cream for the chocolate swiss roll, a sudden idea came to me. Since the double cream is so light and creamy after beating, it should be good with condensed milk to make ice cream. With a packet of frozen mangoes in the freezer, I thought it would be double bonus to make a healthier ice cream. The result was really good. The ice cream was very creamy and delicious. I will surely make again. Just wait till summer is here and I will be eating it everyday…happy me! Now I can save a lot of money again!
Make Condensed Milk And Save Money
I love condensed milk and it’s just so wonderful to know I can make beautiful and easy ice cream out of it. If you like condensed milk like me, you can save a lot of money making it your own. Check it out at How To Make Condensed Milk. It’s very thick which I like. But if you like it more runny or thinner, use less milk powder, maybe 3 cups.
Right, here’s my simple and easy mango ice cream recipe. I had 3 scoops of it……yuuummmm.
Ingredients
300ml double cream
400g condensed milk
2T icing sugar
500g frozen mango (pureed)
Beat the double cream and icing sugar until thickened. Add condensed milk and mix well.
Blend or puree the frozen mango. I just passed it through my masticating juicer, The Best Juicer For Health. It’s just so easy and you don’t need to add water. Just grind it straight into the whipped cream.
Beat it up with a hand held mixer and finally pour the cold mixture into a plastic container and freeze, preferably overnight. Scoop and enjoy. You don’t even have to take it out mid way to beat again.
Homemade For Better Health
Remember, homemade is always the best. There’s no added additives, preservatives, thickener or sweetener. It’s healthier too. I always try to add fruits or vegetables into desserts if I can, to make it a healthier version. I would love to try making ice cream with Greek yoghurt next time. But right now I’m really happy to learn the first step. I’m sure there are going to be more ice creams to come.

Happy blog birthday Mary! I can’t beleive that you have only been blogging for a year! You have so many wonderful wonderful recipes that I thought you were blogging for at least a good 2 or 3 years. You really took me off guard. What a fantastic job you’re doing for just a one year old blog.
You are a genius and can truly work miracles in the kitchen Mary. You are the first person I know who can make ice cream w/o and ice cream make. And boy does that look delicious!
