Sweet potato again…my favourite! It’s very popular in Asian countries. It’s not only liked for its delicacy but for its many health benefits. It is rich in vitamins and minerals, especially vitamin A, B and C. I was brought up eating lots of sweet potatoes. My parents planted them all the time. I can still remember they usually planted 4 types. They were the yellowish ones, light orange ones, darker orange ones and the purple ones. All of them taste very delicious.

Walnuts are very good for health. It has many health benefits and contains more omega-3 than any other nuts. So when I saw this recipe in one of my Australian Women’s Weekly cookbooks, I was so excited to try it out. It turned out very successful. I find it very delicious with a cup of tea. This dish is what I ate very often when I was young. We didn’t have much during those days and our meals were always very simple but very healthy. We only had sea salt and soya sauce for seasoning the food. We didn’t always have chicken and so most of the time this dish is just eggs, vegetables and sea salt but we were all very happy and ate it heartily with  a big plate of rice. We were always thankful for any food that we had. I still cook this dish very often.

My whole family loves this rice pancake. It’s called ‘chee cheong fun‘, ‘cheong fun‘ or ‘churng fun‘ in Malaysia, Singapore and Hong Kong. This is a very popular Chinese dim sum dish, one which my children will order a few plates if we ever visit a dim sum shop.

When I came across this recipe at LilyNg’s blog, I was very excited. I tried it out the very next day for breakfast. My family liked it very much. This rice pancake is still a little too soft for my taste but it’s a good one to start off with and then tweak around later. At least I’m happy we don’t have to run to dim sum shop for this which is also very expensive to eat. I checked it out with Lily and she said she is still looking for the perfect ‘chee cheong fun’, like what we get back in Malaysia.

I also made a chocolate cake with it to share with friends. It was very moist and delicious. This would make a beautiful dessert for any occasion, especially if frosted.

Keep Learning Keep Smiling 1st Birthday

Yeah……it’s my blog’s 1st Birthday today!! How happy I am to know I have blogged for one year! I have learned many things, cooked many new dishes, blogged consistently and smiled through the whole year. It’s unbelievable and it’s an amazing journey. I have made many wonderful friends too. Keep Learning Keep Smiling does live up to its name….yippee!

I told myself that I want to take a new challenge to learn and make something new and something that’s also my favourite for my blog birthday. After much thought, I decided to go for ice cream. I love condensed milk, I love mango and I love ice cream. This sounds just perfect for my First Blog Birthday…..mmmmm. It is also a challenge to me. Well, summer is coming and I know my family would simply love it.

I mentioned in my previous posts that I wasn’t too happy when I found that 2 of my blog posts were stolen. But joy returned pretty soon after. The first one was the box of goodies sent by a lovely food blogger friend, Ann. Then I received a couple of emails from readers that they have tried out my recipes and really liked it. Stella, a regular reader and friend, said she must have cooked the Quick Sour Plum Sauce Chicken at least 9 - 10 times because her young son likes it very much and asks for it often. Wow……even I have not cooked it so many times! Zibi loved the Spicy Cashew Nuts Chicken (Gong Bao Chicken). She has even successfully made it in the slow cooker! That’s fantastic. Now I’m learning from her! I must say it’s all very encouraging.
