From the many salmon dishes that I had posted, it’s obvious that many people like salmon, whether for it’s health benefits or for it’s flavour and delicacy. Salmon is very versatile and can be cooked in many ways. My family loves salmon and I cook it very often. But there are times when I cook too much and there are leftovers. I am not very good in using leftovers and sometimes they just ended up in the bin. This rice noodle fry with leftover salmon actually turned out delicious. I liked it but my husband thinks it would be more delicious with chicken. I think it’s because he has never heard or eaten fried noodles with salmon!

That’s all because of the beauty of a multi racial nation. Prawn soup noodles, locally called ‘Hokkien Mee‘, is just one of the very popular one dish meals. It’s spicy but very delicious.

I was first introduced to this most delicious dish when I was in Penang, also known as ‘Pearl of the Orient’. I fell in love with it immediately. So this dish is always known as Penang Prawn Noodles to me. This is one of my top family favourite, more so for me as I really love prawns. This is one dish that my family would ask for every now and then.

I’m excited to share with you a new found way to enjoy sweet potato…..scones. Of course it’s great on its own or made into a dessert or even into a savoury dish. When my first attempt at sweet potato scones turned out very successful, I was over the moon. They tasted really good, even on its own. I love pineapples very much. I love eating it just as it is with a little sprinkle of salt. Sometimes I make pineapple juice out of it. But what if the pineapples are not sweet. That happens here very often because pineapples are imported and they are rarely fresh and sweet like back home in Malaysia. The best way is to make a salad out of it. One of my best is pineapple and cucumber salad.
