Sweet Potato Carrot Cake

Talk about sweet potato, I just become happy and alive. I think my house never run out of it. Sweet potato is a very nutritious vegetable and very delicious no matter how you cook it. It’s complex carbohydrate, high in fibre and very good for health.
I always boil or bake the sweet potatoes but every now and then I love to make desserts out of it. They are very delicious and healthier than many other cakes. This time I tried to add carrots and walnuts to it for extra nutrients and delicacy. The cake came out moist, dense and very delicious.
This recipe is simple and quick. If you use a low tin, it bakes fast. That’s what I usually do.
Ingredients A
125g butter
1/2C sugar
3 eggs (beaten)
1/2C walnuts (chopped)
Put butter and sugar in a medium sized cooking pot and melt under low heat. Remove from heat once it’s all melted. Add the walnuts and beaten eggs to the butter mixture.
Ingredients B
100g grated sweet potato
100g grated carrots
1 C self-raising flour
1t vanilla essence
Add flour to the mixture in Ingredients A above and mix well. Finally add the grated sweet potato and carrots and mix. Pour into a lined lamington tin and bake for about 20 minutes at 180 degrees Celsius. It’s cooked when a skewer inserted into the centre comes out clean. If you make it thick, it will take longer time. Let cool, cut and enjoy. I love it just as it is with a cup of tea. I’m sure it would be very delicious too with cream cheese frosting or ice cream.

You are so creative with sweet potatoes! You have to send me some of your sweet potato creations as I like sweet potatoes too, but don’t do too much with it except bake and boil. This will be really good for my afternoon tea.

Funny I never made sweets with sweet potatoes, made carrot cake a few times and that’s it. I think that’s a great recipe, your cake looks really moist and I would eat it with a cup of tea! Yum

Dear Mary - I adore Asian carrot cake a.k.a turnip cake that is such a big part of yum chaa (dim sum) brunches. I can stuff my face with this stuff till I am blue!
The fact that you taken this traditional recipe and turned it on its head with a sweet twist is incredible and so healthy without the sausage etc.

Ooh, MaryMoh you do come up with such fabulous recipes. I love the sound of using sweet potato in a cake. I’ve used beetroot which works well with chocolate and also courgettes, but had not thought of using sweet potatoes.

This cake is wonderful. Moist and very good flavor. You can still taste the sweet potato even tho there’s only 3/4 cup. I put 1 cup of rasins and run them through the chopper with a little of the Bmilk. I put Cream Cheese Frosting on it. I took it to a Church Supper. Everyone loved it.
