Sweet Potato Scones With Condensed Milk For Mother’s Day
I’m excited to share with you a new found way to enjoy sweet potato…..scones. Of course it’s great on its own or made into a dessert or even into a savoury dish. When my first attempt at sweet potato scones turned out very successful, I was over the moon. They tasted really good, even on its own. Then, there goes my favourite….condensed milk! Drizzled heavily over them and I’m in cloud 9…..fabulous!! If you want to make your own condensed milk, check it out at How To Make Condensed Milk.
It’s Mother’s Day this coming Sunday and I thought it timely to share with everyone something healthy to celebrate this special occasion. Biren of Roti n Rice had just shared a beautiful, healthy brunch for Mother’s Day two days ago on my blog. It’s a good reminder to us to eat healthy for better health and sweet potato is a very healthy vegetable, high in fibre, vitamins and minerals.
This recipe is actually easy and I enjoy cutting the dough into rounds. I made them small and they look so cute and pretty. I made about 50 pieces to share with friends. I really liked them very much. I must have eaten at least 6 pieces. I kept 4 for the next day. They were still very delicious, except a little drier.
Ingredients
125g butter
1/2C sugar
2 eggs
4T golden syrup
2C cooked, mashed sweet potato
5 & 1/3C self-raising flour
2/3C milk
Beat butter and sugar until light. Then add the eggs one at a time, beating well after each addition. Add the golden syrup and continue to beat. Add the mashed sweet potato and mix well. Finally add the flour and milk in 2 lots and mix. Do not over mix.
Remove the dough onto a flat surface and roll it out to about 2cm on thickness. Cut into rounds using a cutter. I used quite a small cutter and I got about 50 pieces.
Put the rounds close to each other on paper lined lamington tin and bake at 200 degrees Celsius for about 20 minutes. This depends on the size of the dough that you cut out.
Depending on the type of sweet potatoes used, you may need to adjust the amount of flour used.

Pumpkin scones are enjoyed in Australia, and back when I was younger and didn’t like pumpkin, it was the only way I ever ingested any! I think sweet potato scones might be even better. They look pretty damn good anyway!

Wow! Nice colour and bet taste good too! surprising you can make scones like this without it being overmixed. From what I gathered most scones recipes required the dough to be mixed until just combined in order to get the crumbly effect.
