Pineapple And Cucumber Salad
I love pineapples very much. I love eating it just as it is with a little sprinkle of salt. Sometimes I make pineapple juice out of it. But what if the pineapples are not sweet. That happens here very often because pineapples are imported and they are rarely fresh and sweet like back home in Malaysia. The best way is to make a salad out of it. One of my best is pineapple and cucumber salad.
This salad is very popular in Malaysia. It’s very refreshing and delicious. A lot of Malaysian foods are very spicy and oily. This pineapple and cucumber salad helps to cut the heat and oiliness. I even love it as it is, especially chilled. It goes well with almost anything. You can make more and keep for the next day.
Pineapples are very easy to cut. Just in case you are not sure or want to minimise wastage, check out at How To Cut A Pineapple.
This recipe is very simple. In fact there’s no fixed recipe. You just adjust according to your taste. The amount of seasoning added fully depends on the sweetness of the pineapple and also the amount of lime or lemon added.
Ingredients A
1/2 pineapple
1 cucumber
1 red chili
1/2 red onion
Peel the pineapple and cut into small pieces. Cut the cucumber length wise in half. Scoop out the centre and slice the rest into small pieces. Peel and cut the red onions into small pieces and lastly, de-seed the red chili and cut into small pieces, too. Put all into a mixing bowl and add Ingredients B. Mix well and chill for about 1 hour before serving.

1/2T sea salt
2T sugar
juice of 1 lemon or lime

Such a combination usually reminds me of Achar but this salad is definitely more refreshing and light without the peanuts.

Mmmm, nice refreshing salad; I like the combination of hot chillies with sweet pineapple taste;
my favourite is a mixture of canned tuna fish/apple chunks/corns with a tbsp of vinaigrette on it…:)

I really like pineapples but cannot eat too many. For some reason my tongue gets numb if I do. Maybe I’m allergic? My parents and I love to dip fruits in salt mixed with some chili sauce. Have you ever tried that? If not give it a try, I think you may like it. I bet this recipe would work well with mangoes for me instead of pineapples. Thank you again for sharing your wonderful magic.

That’s a very refreshing salad which will definitely go well with curries. I also like them cooked in curries. Cooking it kind of reduces the acidity and somewhat blunts the sharpness.
