Pineapple and cucumber salad

Pineapple and cucumber salad

I love pineapples very much. I love eating it just as it is with a little sprinkle of salt. Sometimes I make pineapple juice out of it. But what if the pineapples are not sweet. That happens here very often because pineapples are imported and they are rarely fresh and sweet like back home in Malaysia. The best way is to make a salad out of it. One of my best is pineapple and cucumber salad.

This salad is very popular in Malaysia. It’s very refreshing and delicious. A lot of Malaysian foods are very spicy and oily. This pineapple and cucumber salad helps to cut the heat and oiliness. I even love it as it is, especially chilled. It goes well with almost anything. You can make more and keep for the next day.

Pineapples are very easy to cut. Just in case you are not sure or want to minimise wastage, check out at How To Cut A Pineapple.

This recipe is very simple. In fact there’s no fixed recipe. You just adjust according to your taste. The amount of seasoning added fully depends on the sweetness of the pineapple and also the amount of lime or lemon added.

Ingredients A
1/2 pineapple
1 cucumber
1 red chili
1/2 red onion

Salad ingredients

Salad ingredients

Peel the pineapple and cut into small pieces. Cut the cucumber length wise in half. Scoop out the centre and slice the rest into small pieces. Peel and cut the red onions into small pieces and lastly, de-seed the red chili and cut into small pieces, too. Put all into a mixing bowl and add Ingredients B. Mix well and chill for about 1 hour before serving.

Ingredients B
1/2T sea salt
2T sugar
juice of 1 lemon or lime

Such a combination usually reminds me of Achar but this salad is definitely more refreshing and light without the peanuts.

Mmmm, nice refreshing salad; I like the combination of hot chillies with sweet pineapple taste;

my favourite is a mixture of canned tuna fish/apple chunks/corns with a tbsp of vinaigrette on it…:)

Trisha  on May 3rd, 2010

I first tasted this at a party hosted by Ellie of Almost Bourdain and I couldn’t stop munching on this!!!!

lequan@luvtoeat  on May 3rd, 2010

I love all the ingredients in this salad Mary, very refreshing. Such wonderful combinations of sweet, sour and spiciness :-P
I really like pineapples but cannot eat too many. For some reason my tongue gets numb if I do. Maybe I’m allergic? My parents and I love to dip fruits in salt mixed with some chili sauce. Have you ever tried that? If not give it a try, I think you may like it. I bet this recipe would work well with mangoes for me instead of pineapples. Thank you again for sharing your wonderful magic.

lequan@luvtoeat  on May 3rd, 2010

Oh and thank you for the advice about the chili oil. My mom makes her own too and we definitely always have a jar of that at home. I almost panic when the jar is almost gone lol. Have a super week Mary! :-D

nisha  on May 3rd, 2010

@SathyaSridhar - Thanks very much, Sathya! :D

@Bakericious - Thanks very much! I really miss the sweet pineapples. I can’t wait to go home and eat lots & lots of them. The last trip I went back, we ate pineapples and young coconut almost everyday! We were so happy :D By the way, eating it with salt helps to minimise the ‘cutting’ effect on the tongue.

@anncoo - You are very right. The Sarawak pineapples are so, so sweet…very delicious! Now I’m craving for them and missing home :(

@tigerfish - Oooh… love achar….so good with keropok….mmm. Makes me happy just to think of it :D

Thanks very much for letting me know about the Food Blogger Conference. I would really love to join. I know there’s going to be so much fun but sadly I had some family matter to attend to and won’t be able to make it. If only it had been this month! But please share with me after you attend it.

@Vinolia - Thanks very much for sharing, Vinolia! :D Love your salad, especially with apple and corn. I love the natural sweetness there…mmm

@Trisha - When I serve to my friends here, they also cannot stop munching…haha. I think it’s good for those who are on diet :D I’m sure you don’t need to lose weight. You are already so slim!

@Drick - Indeed, it’s very refreshing for the hot summer. But we don’t have many hot days here. Wish the hot days are longer! But very thankful it’s not freezing cold like the winter :D

@Angie - Thanks very much, Angie! :D

@MarkSpizer - Thanks very much, Mark! :D

@lequan@luvtoeat - Thanks very much, LeQuan! :D Oh, so sorry to hear you are probably allergic to pineapples. I know of a friend who sweats profusely when he eats pineapple! Salt and chili sauce as dip? Oh…I would love to try that. Must be very delicious…mmm. Thanks very much for sharing. I bet it’s very delicious with mangoes, too.

Haha…you must be a chili oil queen. A friend of mine adds chili oil to almost everything!

@nisha - Thanks very much, Nisha! Have fun making this salad :D

@theUngourmet - Thanks very much! :D I’ll surely be making lots of this salad when we have BBQ this summer. Can’t wait for the hot weather to be here.

@Jeannie - Thanks very much, Jeannie! :D Oh…now you have just started my craving for rojak. I have to go and hunt for rojak paste.

@5 Star Foodie - Thanks very much, Natasha! :D

grace  on May 3rd, 2010

i often order a dish in a restaurant simply because it contains pineapple. this salad is great, mary–full of crunch and sweetness!

Lyndsey  on May 3rd, 2010

I haven’t had this salad yet. It looks so healthy and a great combo. I have a pineapple now, just waiting to be used. I never knew what to do with it if it wasn’t sweet. Thanks!

What a gorgeous salad, the color are so bright. I like pineapple but I’m the only one here that does…darn it!

teresa  on May 3rd, 2010

oh my goodness, what a gorgeous salad indeed!

Carolyn Jung  on May 3rd, 2010

This is one of my favorite combos of flavors — sweet, fresh and a little spicy. This is a salad that I could happily eat every day.

noobcook  on May 3rd, 2010

This is a really nice appetizer that is sure to whet my appetite b4 the main course!

Roti n Rice  on May 3rd, 2010

That’s a very refreshing salad which will definitely go well with curries. I also like them cooked in curries. Cooking it kind of reduces the acidity and somewhat blunts the sharpness.

3hungrytummies  on May 3rd, 2010

Nice refreshing dish to go with any curry!

Mary  on May 4th, 2010

@Michelle - Oh…you are very lucky then…no one to fight with you over pineapples…haha :D

@teresa - Thanks very much, Teresa! :D

@Carolyn Jung - Thanks very much, Carolyn! :D

@noobcook - Indeed it is. Sometimes I even eat it early in the morning :D

@Roti n Rice - That’s new to me, cooked in curries. I would love to try. I have tried pineapples in curry but not the salad in curry yet. Thanks very much for sharing, Biren! :D

@3hungrytummies - Thanks very much, Suresh! :D
