Curry laksa is one of my family’s top favourites. There are lots of Malaysian curry laksa. I must say every state and every race in Malaysia has its own version of laksa. To make laksa from scratch is very time consuming as there are all the spices and herbs to pound. Packet laksa mix or fresh laksa paste are easily available these days which brings back the joy and fun of home cooked laksa. While fresh laksa paste is usually not available overseas, as far as I know, I’m just very thankful that I can get packet laksa paste here.

I usually serve all the dishes on the table but I also like serving a meal on a plate for various reasons. Firstly, it looks beautiful. Secondly, there will be no leftovers as all the food are divided out. Thirdly, it looks a lot and this will discourage more helpings. This is good especially for those who are trying to lose weight. This salmon burger dish is one of them. It makes for a good adult’s meal as well as a kid’s meal.

I love salmon not only for it’s delicacy but also for it’s health benefits, especially wild Alaskan salmon. It is high in Vitamin D and omega-3 fatty acids which are important for the heart and brain. Unlike other meat, it is not fed with antibiotics and hormones. Wild Alaskan salmons are also caught from the least polluted place on earth.

But like all other journeys, there are challenges and setback on the way. But like any other journey, it is important to enjoy it and keep smiling as we keep learning. Fish and chips are very popular here in UK. I love them too but only eat on special occasions, mainly because it’s very oily. Usually it comes with a thick layer of batter and full of oil. Together with the chips, I’m always too full and feel exhausted after such a meal.

At home I love to make fish fritters. It is good as a starter or a meal. It goes well with cucumber slices and a good dipping sauce. Cucumber is a very popular vegetable in Malaysian cuisine. It is often used as garnishes and salad. In Malaysia, the weather is hot throughout the year and cucumber is always most welcoming. It’s refreshing and cooling. On top of that, a lot of Malaysian dishes are spicy. Cucumber helps to cool the heat.

Talk about sweet potato, I just become happy and alive. I think my house never run out of it. Sweet potato is a very nutritious vegetable and very delicious no matter how you cook it. It’s complex carbohydrate, high in fibre and very good for health.

Sweet and sour dishes are very popular at Chinese restaurants. You can order fish, chicken or pork, the usual meat used. However not all restaurants serve very delicious sweet and sour dishes. I have tried a few and it was rather disappointing. Some are too sweet, some are too sticky, some are too bland, some use colouring while some have more sauce than meat. This dish is usually colourful because of the vegetables and the balance of sweet and sour must be correct to make it one that you want to eat over and over again.

One thing I’m very particular about my family’s diet is vegetables and fruits. It’s always a mountain to climb when you have picky children who don’t like vegetables and fruits which are so important for the bowels and overall health. I find that a good way to add more vegetables is to hide them in food.

Fritters are a good way to do so. These vegetable and crab stick fritters are much liked by my family. They are like little pancakes. I packed 7 pieces of them for my hubby to bring to office for lunch one day. When he came back in the evening, he asked me why I gave him so few! Well, I only had 3, in the photos here. He really should be happy! Anyway, I’m glad he liked them. These are really delicious with chili sauce….mmm.
