Okra and Char Siu Chicken Stir Fry
Okra is a very healthy vegetable, especially good for the bowels. My favourite way of cooking it is to fry it with eggs as in Okra Fried With Egg, or with anchovies as in Okra (Ladies’ Fingers) And Anchovies Stir Fry. That was how my mom used to cook it for us when we were young. Another of my favourite is to fry it with char siu chicken. The lovely flavour of the char siu chicken makes this dish very flavourful. The other of my favourite way to cook okra is to cook curry fish with it. It’s very delicious.
Char siu chicken is very easy to make at home and it is very delicious to go with rice, noodles or fried with vegetables. I used the ready bottled sauce which never fails. Check it out at Super Fast Chinese Roasted Chicken.
This recipe is again very simple and easy. Just remember not to add water otherwise it will be slimy.
Ingredients
350g okra (sliced)
3 pieces char siu chicken (sliced)
2 red chilies (chopped)
fried garlic oil
sea salt
Slice the char siu chicken into strips.
Heat up some fried garlic oil in a frying pan or a wok. Add the okra and keep frying. It may become slimy even without adding water. Just keep frying as it will soon dry up. Add the char siu chicken pieces, chopped chilies and sea salt to taste. Taste for doneness of the okra. I know some like it a little crunchy and some like it very cooked like me. You can omit the chilies if you don’t like it spicy. Dish it up and serve hot. It’s very delicious with rice.

Never thought of cooking okra with char siu. Sounds great! I usually add okra in the curry fish head or just blanch the okra in boiling want and eat with sambal chilli.

Another wonderful dish as usual Mary. We usually eat okra very plain, just boiled in some water, drained and dip in a mixture of pure fish sauce, lime juice, and chili sauce with some white rice. Or my mom will use it in Vietnamese hot and sour soup. Oh and I like my okra medium cooked. Not too soft, not too hard. Hope you have a lovely start to your week.

I LOVE okra, but have a terrible habit of destroying any dish with okra in it! It becomes very sticky (almost) and tastes like mush! what could I be doing wrong?? And also, is it okra season? I haven’t found any fresh okra at my local grocery store! Thank you!

@Patty - Thanks very much for sharing, Patty! I think you have probably added some water when you cook it. Try using a wide based frying pan to cook it. Also use a higher heat so that the slime dries up as you keep frying it. I’m not sure whether it’s okra season here but I think the okra here that we get are all imported. Give another try, Patty. @Light Delight with TouTou - Learn a little trick and you will find that cooking okra is very easy. I only know that I should not add water, use higher heat and keep stirring and it always comes out very delicious. That’s how my mom did it. Good thing that I saw and learned…haha

Hi Mary, this Char Siu Chicken looks wonderful, but the fish with okra recipe you mentioned sounds really good too. Where I’m from, okra grows beautifully, so I grew up with it and love it…

Few weeks ago I combined okra and chicken together for the first time, you were my inspiration as i’ve read few recipes of yours with okra and chicken. I absolutely loved it. This recipe is really easy too, will try sometime soon.

my mom likes to microwave her okra to get it soft and slimy to eat with dinner. she just dips it in a little bit of soy sauce. that’s how i grew up eating okra. nowadays, i actually grow okra in the garden. we actually had a ton last year - and the funny thing was, we didn’t harvest them in time so it grew to be the size of a cucumber. by the time we tried to grill it, it was so tough it was like eating leather. sigh…
