Condensed milk sweet potato cake

Here comes my top sweet favourites in a cakecondensed milk and sweet potato! This is one beautiful dessert that makes my day. This is just another little achievement of Keep Learning Keep Smiling. Trying out new things is always fun and exciting.

We were taught from young, “If there’s a will there’s a way”. It’s very true. Desires and passion drive you to achieve. Here, my craving (passion?) for condensed milk and sweet potato drives me into a creative mode many times. This condensed milk sweet potato cake is just another new creation and it is very delicious. It’s my new favourite. It doesn’t come with the texture of normal cake but I like the texture, the flavour and the taste.

Just in case you missed out, you can make your own condensed milk. Check out How To Make Condensed Milk. It’s very simple and easy to make. You can save a lot of money if you are a condensed milk lover or addict like me.

This recipe is very simple and easy….just mix everything and bake. Besides, it’s non-gluten. Sweet potato is high in fiber and good for health. So, this is a healthier cake.

Ingredients
400g cooked, mashed sweet potato
100g glutinous rice flour (or mochi flour)
400g condensed milk
200g coconut milk
4 eggs (beaten)
60g butter (melted)

Mashed sweet potato

Cake mixture

Cake mixture

Mix everything together. Pour into a baking paper lined tray and bake at 200 degrees Celsius for about 25-30 minutes. If you use a smaller or deeper tin, you will need longer time to bake this. I didn’t have time and I wanted it to cook faster so I used a lamington tin.

Let cool before you cut. You can keep in the fridge and it still stays soft and delicious.

@Shirley - I have not tried with rice flour. Give a try. I think it should work but with a slightly different texture. The flavour from the sweet potato and condensed milk will still be there. I would love to try that next time :D

I love sweet potatoes and sweetened condensed milk, but together they make a wondrous dessert! With the mochi flour in the recipe, I know this has the kind of texture that I love.

I so agree! Trying new things is what keeps cooking exciting. I don’t bake often, but this looks like a recipe I could handle. I have everything I need except the coconut milk. I wonder if light coconut milk would work?

Oh Mary have I told you how much I love your blog and recipes!? Once I read this title I was so excited to keep reading. Sweet potatoes are one of my favorite things to eat. They’re so simple yet so delicious and they add such beautiful vibrant colour to dishes. When I was a kid I used to just eat condensed milk between to slices of bread and that would satisfy me. Now you have come up with a recipe with two of my most favorite things to eat. I am not a good baker but you are tempting me to try this out. Thank you so much for this recipe and most of all for having such an awesome blog :-D

Mary, your cassava cake was a big hit in my family. I wasn’t so sure about the measurement cos we don’t use weight as a measurement in our cooking in the U.S. Thank goodness for the Internet! Such a great orange colour. This sounds very tasty, I love sweet potato and condensed milk and coconut milk and tapiioca flour :) I think I would love the texture.

How creative! I have to admit though that I’ve never tried sweet potoatoes with condensed milk.

Judging from the ingredients, I imagine this creation of yours would have a similar taste and texture to those Malay kuihs.
