Lemon Cake And Easter Joy
It was Easter yesterday, the day that Jesus rose from the dead, a reminder that in Him there is victory and life…..an abundant life. The resurrection power gives me joy, courage and confidence to live each day and makes my life meaningful.
Tulips and Easter
I had a very wonderful weekend to celebrate Easter. A lovely friend came by and brought a gorgeous bunch of tulips for me! I was most touched by her love. She had to walk at least 20 minutes to the nearest bus-stop to catch a bus to the city centre where she had to hop onto another bus to get to my place. It took her about 2 hours!
She has been going through very tough times. Yes, she has cried through the pain that she is going through but listening to what she shared, instead of being an encouragement to her, I felt more encouraged by her. Here she is, less than 30 years all, far away from home, all alone here and going through painful times but yet remains very positive and outward looking.
On top of that, I am absolutely impressed by her attitude in working. She is someone who is willing to walk the second mile and do the company proud. Due to economy downturn, all her colleagues were asked to leave. She was the only one left….because of her working attitude. She always does her work well, finishes on time and even willing to help others to finish theirs, despite going through difficulties. That’s Easter……boldness and victory in the midst of difficulties.
The Power of Easter
Life can be very challenging and tough. I’ve gone through many scary, helpless and painful moments in my life and felt like giving up but I’m really thankful that I held on and came through well. When all else seemed to fail, God never fail. There is nothing more important than having God’s peace and love in my heart even when life seems to fall apart.
Personally I have been encouraged many times by people who went through difficult and painful times…..how they were able to stay positive and cheerful. They knew how to draw divine strength from God. That gives me greater courage to stay positive and believe for better times. That’s the power of Easter!
Life is like a Lemon
Life is sometimes like a lemon. You can choose to remain sour and be like a lemon or you can turn it into something very delightful for yourself and be a blessing to others. You can squeeze it to make a refreshing lemon drink and refreshes others or you can make it into a lovely dessert and warm up the hearts of many around.
Seasons of Life
Everyone goes through seasons of life. Just like winter, freezing cold and depressing, but it will pass. Even in winter, there are moments of phenomenal beauty, the beauty of snow. Besides, the sun can be most bright in winter. Similarly in my darkness moments in life, I find God most real…..the real Sun of my life. I believe that’s the power of Easter, the victory that I can have in God.
Lemon Cake for Friends
Lately several of my friends are going through struggles and pain and finding life just too difficult to cope. I have made this special lemon cake for Easter, dedicated specially to them, and for everyone who is going through tough times at this moment, whether in relationship, children, marriage, job, sickness, finance, death of loved ones etc. Please do not give up. You are very precious. Nothing is more important than your life. You are just going through a season.
This lemon cake recipe is very simple and easy. Just beat up everything and put to bake.
Ingredients
125g butter
2t grated lemon rind
1C castor sugar
3 eggs
1/2C milk
1 & 1/2 C self-raising flour
1/4C lemon juice
Put everything into a mixing bowl and beat until smooth and changed in colour. Pour into a tin lined with baking paper and bake at 180 degrees Celsius for about 40 minutes or cooked. It’s cooked when a skewer inserted into the centre comes out clean. You can dust with some icing sugar or pour lemon syrup over it. I had it with ice cream and strawberries and that was really delicious.
Friends, when you go through tough and painful times, my prayer for you is that you will become better and not bitter, victorious and not defeated, humbled and not proud, bold and not timid. Be courageous and move on.
Remember that life is like a lemon. You have a choice what to do with it.

Lovely post Mary. I always believed there are people like your friend who is hard working and no complaint.
I still remember my ex-boss who was a very nice and sweet person for which I worked for him for 15 years. Before I left his company, he gave me an air ticket to States for a month holiday. I was really sad at that time even now (sometime) but we still in contact whenever he and his family are in Singapore.

You are indeed right. Life is so precious even if you are going what seems like endless struggles. There’s always a solution to any problem you are dealing with. Mary, you’re lemon cake is so simple. I thought it would take more ingredients to make it. I have some leftover lemons from Easter party so this recipe is perfect.

Great cake and sorry for your friend, hope she feels better soon. She is lucky to have such a wonderful friend like you. I guess we all go through some tough times at some point in our lives, and should be lucky to have good friends around. I’m sure that cake helped too!
