Spicy salmon on spinach

Salmon is exceptional for its health benefits and highly popular in the culinary world. I would call it a wonder fish because of it’s high essential omega-3 fatty acids which are very important for our bodies, especially the heart and also the brain, besides its reported abilities to prevent or improve a lot of other sicknesses and diseases.

I grew up eating a lot of fish because my parents believe that fish are good for the brains. I remember my parents always said that my black, shiny hair was because of the amount of fish that I ate. We didn’t had much so my mom used to buy the cheapest fish almost everyday. We just had it pan fried and some soya sauce to go with it. While we ate the fish, the cats enjoyed the bones, head and skin. Not only were we healthy but our cats were very healthy too. We did not have money to buy cat food. In fact, there was no cat food around. Our cats ate what we ate, mostly fish bones and rice…..Chinese cats…..haha.

I am always fascinated by mountains. I love mountains. They speak so much about life (will share another time). I have climbed a couple very low ones which took about an hour to reach to the top. The highest that I have climbed was Lochnagar, 1155m high, here in Scotland. The climb was tough but the mountain top view was absolutely stunning. But here I’m excited to introduce to you the most beautiful mountain in South East Asia, none other than Mt Kinabalu of Malaysia.

Sambal prawns and edamame came as a surprise to me. They actually combine well. Both the prawns and edamame are tender and delicious and with the hot and spicy sambal, it tastes really good. I love prawns, or shrimps, so this has now become another favourite of mine.

I only learned about edamame when I came to Scotland. A friend introduced me to it. I fell in love with it the first time I tried it. Best of all, my family likes it too. Edamame is the young soya beans and are green in colour. They are very nutritious and delicious even boiled plain. Sometimes I do that and eat as a snack when watching TV. Sometimes I made a vegetarian appetiser as in Best Vegetarian Appetizer

Okra is a very healthy vegetable, especially good for the bowels. My favourite way of cooking it is to fry it with eggs as in Okra Fried With Egg, or with anchovies as in Okra (Ladies’ Fingers) And Anchovies Stir Fry. That was how my mom used to cook it for us when we were young. Another of my favourite is to fry it with char siu chicken. The lovely flavour of the char siu chicken makes this dish very flavourful. The other of my favourite way to cook okra is to cook curry fish with it. It’s very delicious.

Cashew chicken in hot and spicy sauce

Chicken is easy to cook whether you bake, boil, stir fry, deep fry, grill or whatever way you cook it. Not only is it easy to cook but it is very tender and delicious. I like to cook chicken. If you follow my posts, you will find that I like hot and spicy food. It gives that punch as it tantalizes your taste buds. Sometimes I cook too spicy even for myself. No worry. The most effective way is to have a glass of milk at the side. It really works.

Nuts are very nutritious and good for health. Adding to meat dishes is very common in Chinese cooking. I like to use cashew nuts, peanuts or pine nuts. Cashew nuts work very well in this dish.

Back home in Malaysia we use a lot of coconut in our cooking and desserts, like Best Coconut RollsPopular Malaysian Dessert (Bubur Cha Cha)9 Layered Coffee Rice Pudding and Condensed Milk Tapioca Cake, to name a few. We use it a lot in our curries, too. Freshly grated coconut is easily available. Nothing beats that. It gives awesome flavour, no matter what you cook.
