Salmon And Asparagus Stir Fry

One of my favourite fish is salmon. I love the taste and texture. On top of that it’s a very healthy fish that’s high in omega-3. If you like very high quality salmon, the best is Wild Alaskan Salmon which is much more costly. Over here in UK, there are a lot of farm reared salmon and they cost a lot cheaper. I eat both types.
Salmon is very delicious cooked in any way, whether deep fried, pan fried, stir fried, poached, smoked, baked or grilled. The most important is not to over cook it. It is very tender and delicious when just cooked but turns tough when over cooked. The time to cook depends very much on the thickness of the salmon.
This salmon recipe is another addition to my favourite. Since my family likes asparagus, I decided to cook salmon with asparagus. Asparagus is a very delicious vegetable, tender and has it’s natural sweetness and it goes very well with salmon. It is very delicious too with prawns as in Asparagus With King Prawns.
This recipe is again very simple. I love stir fry because it’s very easy and quick. All you need is a good wok or a thick based frying pan. I can’t cook without both.
Ingredients A
400g salmon (cut into pieces)
1T light soya sauce
2T chili sauce
1T corn flour
350g asparagus
Marinade the salmon with the soya sauce, chili sauce and corn flour for about 30 minutes. Heat up some oil in a frying pan. Add the salmon pieces and fry until just cooked. Dish up.
Heat up some fried shallot oil in a frying pan and add the asparagus. Keep frying the asparagus until just tender.
Pour back the salmon and add the seasoning in Ingredients B. Mix well and dish up. Adjust the seasoning according to your taste. The asparagus has a natural sweetness of its own so you may just want to keep the seasoning light and simple.

1T fish sauce
1T chili sauce
fried shallot oil

Love this stir-fry! Salmon is definitely our favorite fish to have at home. I usually bake it simply with just a sprinkle of lemon, salt and pepper, but one of my husband’s favorite is with honey and fresh basil. As for asparagus, I usually just steam it although I have a very nice recipe for asparagus tart that’s great for brunch!

I do not eat much fish especially salmons which are very expensive here. I eat them only when I get go to a Japanese restaurant, usually as part of a sashimi dish. This is a very different way of eating salmon. Looks good!

I love salmon prepared almost any method! My favorite way of eating it is raw, of course. But prepared any way (steamed, grilled, etc) is all very delicious!

I love adding asparagus to stir fry dishes because it gives the dish so much more depth. I am not a huge fan of fish but my husband would love this.
